Abstract:Tarhana, a dried mixture made from yoghurt and wheat flour, was supplemented with wheat germ/bran to improve its nutritional value. The total titratable acidity (as lactic acid), phytic acid (PA) and colour (Hunter L, a and b values) of tarhana samples were monitored over a three-day fermentation. Titratable acidity of the samples increased sharply during the first day of fermentation and then increased gradually up to the third day of fermentation. Addition of wheat germ/bran to tarhana resulted in increased pH values of the samples. The PA content of tarhana mixture increased as wheat germ/bran amount added to tarhana increased. However, more than 90% of the PA present in the mixtures were inactivated by fermentation. Fermentation caused a decrease in the Hunter L, a and b values giving darker, more green–less reddish and more blue–less yellow samples.

Microbiological and chemical properties of wet tarhana produced by different dairy products

Abstract:This study investigated the use of kefir, yogurt and their combination in the production of wet tarhana with an aim to increase the nutritional value of the end product. Along with microbiological and chemical properties, the volatile compound composition of wet tarhana was also evaluated. Wet tarhana revealed an increase in the lactic acid bacteria count (LAB) with the addition of kefir. After fermentation, counts of total yeast, LAB, and total mesophilic aerobic bacteria were 7.57, 8.26 and 7.64 log CFU/g, respectively. The values of pH and titratable acidity were measured as 4.78 and 4.68% in terms of lactic acid, respectively, at the end of fermentation. Lactic acid content increased from 3.31 to 10.82 g/kg throughout fermentation. A total of 72 volatile compounds were recorded during fermentation and 44 of these were identified by GC-MS. The most abundant compounds identified in the tarhana samples were hexadecanoic acid and 9,12-octadecadienoic acid. Moreover, ABTS antioxidant activity results of all formulations were measured in the range of 15.86 and 19.31 µmol TE/g at the end of fermentation and it was independent of the fermentation period.
A Functional Barley-Based Fermented Soup (tarhana) with High Β-Glucan Content

Abstract:This study investigates the impact of using different flours, including high β-glucan barley, on the nutritional properties of tarhana. Mineral composition, phenolic content, and antioxidant capacity of tarhana powder samples produced using flours of high β-glucan hull-less barley (cv. Chifaa; ChF), hull-less barley cv. Yalin (YF), bread wheat cv. Tosunbey (white flour: TWF1 and whole wheat flour: TWF2). Furthermore, in vitro glycemic index (GI), pasting properties, and RVA soup index of their soups were investigated. Tarhana made with Chifaa barley flour (Tar-ChF) exhibited significantly higher levels of key minerals (K, Mg, Ca), β-glucan and total phenolic content compared to those made with other flours (Tar YF, Tar TWF1, and Tar TWF2). Barley tarhana samples also showed greater antioxidant activity of bound phenolic fractions and lower GI values, indicating a healthier profile. The study highlights the potential of high β-glucan barley flour to enhance tarhana’s nutritional benefits without significantly affecting its sensory properties, such as color and viscosity. This research supports the integration of health-promoting ingredients like barley flour into traditional Mediterranean foods to improve their nutritional quality.

Abstract:A group of heterocyclic amines that are mutagens and rodent carcinogens form when meat is cooked to medium and well-done states. The precursors of these compounds are natural meat components: creatinine, amino acids, and sugars. Defined model systems of dry-heated precursors mimic the amounts and proportions of heterocyclic amines found in meat. Results from model systems and cooking experiments suggest ways to reduce their formation and, thus, reduce human intake. Human cancer epidemiology studies related to the consumption of well-done meat products are listed and compared in this review.

Abstract:Tarhana is a popular Turkish fermented food, made of a mixture of cereal and yoghurt, generally consumed as soup. Both lactic acid bacteria and yeasts are responsible for the fermentation. The selection and proportions of ingredients integrated along with the production process specify the nutritional value and sensory properties of the final product. Therefore, the first objective of the present study was to process a dried “chicken meat powder (CMP)” that could be used in food formulations. The second objective was to determine the impact of CMP addition on the nutritional and sensorial properties of Uşak tarhana recipe with geographical indication. In order to fulfill these challenges dried chicken meat powder (CMP) at levels of 20, 25, 30, and 35% were included in tarhana recipes for the very first time. Within the scope of the study, organoleptic properties of tarhana soups (control and CMP added) were determined, and the formulation with 30% CMP (TCMP30) achieved the highest sensory evaluation scores. This sample was analyzed further, and its physicochemical properties were compared to a control sample strictly following the traditional Uşak tarhana recipe. In the tarhana samples, the moisture, protein, and total fat content increased with higher CMP additions, while the ash, crude cellulose, carbohydrates, energy, salt, and dietary fiber decreased significantly (p linoleic > palmitic with 83.89% of total fat. Over time, the total phenolic content and antioxidant capacity decreased in the control sample but increased in TCMP30. These results suggest that a formulation including 30% CMP effectively enhances the sensory, functional, and nutritional aspects in tarhana.

The effect of using sour cherry (Prunus cerasus L.) puree in tarhana formulations on nutritional value and functional properties of tarhana

Abstract:The aim of this study was to investigate the effects of using sour cherry puree in tarhana formulations on the nutritional value and quality criteria of tarhana. In the formulation, 50% and 100% of tomato and pepper purees were replaced by sour cherry puree, and in another formulation, 100% of sour cherry puree was used instead of yogurt. The use of sour cherry puree instead of tomato and pepper puree enriched the tarhana in terms of essential and other amino acids. Tarhana samples were found to be rich in oleic acid (22.02%-39.12%) among monounsaturated fatty acids. The presence of polyunsaturated fatty acids including linoleic (11.09%-33.56%) and linolenic acids (14.04%-28.91%) was determined in the samples. The dominant saturated fatty acid found in the samples was palmitic acid (8.05%-12.89%). There were no significant changes in moisture, a w, ash content, pH, HMF content as well as water and fat absorption capacity values. When sour cherry puree was used instead of yogurt, there was a decrease in protein (10.71%) and fat (0.38%) contents as well as L (43.46) value, while an increase was detected in total phenolic content (2.38 mg GAE/g), antioxidant activity (10.35 μmol TE/100 g) and mineral composition, namely K, Fe, Cu, Mn, and B. Considering sensory analyses, the sample in which tomato and pepper purees were substituted with 50% sour cherry puree received the highest scores in general taste, flavor, and consistency parameters together with the control tarhana (CT0). The 50% substitution of sour cherry puree with tomato and pepper purees enriched the tarhana samples both nutritionally and sensorially.
A New Approach for the Utilization of Barley in Food Products: Barley Tarhana

Abstract:One hulless and two hulled barley samples were used to produce tarhana samples with relatively high β-glucan content. Chemical and sensory properties of the tarhana samples were investigated and compared with the traditional wheat tarhana. Although some of the β-glucan may be destroyed during fermentation, the results indicated that barley flours can be used to produce tarhana with relatively high β-glucan content. Effect of tarhana production on the electrophoretic properties of proteins was evaluated in this study by using SDS–PAGE. Relative band intensities of tarhana samples were generally less intense than those of respective flour samples probably due to the hydrolysis of proteins during fermentation. The use of barley flours affected the color and RVA soup index values of tarhana samples. However, the overall sensory analysis results indicated that utilization of barley flours in tarhana formulation resulted in acceptable soup properties in terms of most of the sensory properties.

Abstract:Fermentation of available sugars in milk by yogurt starter culture initially and later by Saccharomyces boulardii (Probiotic yeast) improves the bioavailability of nutrients and produces bioactive substances and volatile compounds that enhance consumer acceptability. The combination of S. boulardii, a unique species of probiotic yeast, and inulin, an exopolysaccharide used as a prebiotic, showed remarkable probiotic and hydrocolloid properties in dairy products. The present study was designed to study the effect of fermentation and storage on antioxidant and volatile capacities of probiotic and synbiotic yogurt by incorporation of S. boulardii and inulin at 1%, 1.5%, and 2% (w/v), compared with the probiotic and control plain yogurt. All samples were stored at 4 °C, and during these four weeks, they were analyzed in terms of their antioxidant and volatile compounds. The synbiotic yogurt samples having inulin and S. boulardii displayed significantly higher DPPH (2,2-diphenyl-1-picrylhydrazyl) free radical activity values and more values of TPC (total phenol contents) than control plain yogurt. A total of 16 volatile compounds were identified in S5-syn2 and S4-syn1.5, while S3-syn1 and S2-P had 14, compared with the control S1-C plain yogurt samples, which had only 6. The number of volatile compounds increased with the increasing concentration of inulin throughout the storage period. Therefore, this novel synbiotic yogurt with higher antioxidant and volatile compounds, even with chilling storage conditions, will be a good choice for consumer acceptability.

Abstract:New gluten-free food product (tarhana) was produced using rice and corn flours. Chemical and sensory properties of the tarhana samples were investigated and compared with those of traditional wheat tarhana. Generally, sensory analysis results indicated that utilization of corn and rice flours in tarhana resulted in acceptable soup properties in terms of some of the sensory properties. The changes in electrophoretic properties of the proteins of the tarhana samples were also studied during the tarhana production. Sodium dodecyl sulfate-polyacryamide gel electrophoresis (SDS-PAGE) results showed that relative intensities of some of the protein bands in tarhana samples generally decreased during fermentation. The decrease was more obvious at the larger molecular weight region. Corn and rice tarhana seem to be promising food products for the celiac patients who have limited choice of cereal based foods.
Effects of different preservation methods and storage on Spanish‐style domat olives fermented with different chloride salts

Abstract:In this study Domat olives were fermented with different chloride salts (NaCl, KCl and CaCl2) then preserved with different preservation methods (pasteurization, potassium sorbate and ozone treatment). The effect of preservation methods on the main physico‐chemical and microbiological characteristics related to these table olives were evaluated during the storage period (up to 240 days). The results showed that preservation and storage affect the characteristics of table olives. Preservation methods applied reduced the hardness of the olives, pasteurized olives were found the hardest and ozone treated olives were the softest at the end of storage. Preservation techniques have significantly affected the pH of olive brine and statistically found to be different from pasteurized olives, potassium sorbate used and ozonated olives (p<0.05). In particular, the a* values of olives with potassium sorbate changed from the green region (negative values) to the red region (positive values) during storage. The lowest a* value was determined in olives using potassium sorbate and the highest a* value was determined in pasteurized olives. While potassium sorbate was effective in yeast‐mold inhibition, it was not effective on lactic acid bacteria (LAB) and total mesophilic aerobic bacteria count (TMAB), and approximately 1 logarithmic unit reduction was observed in LAB and TMAB numbers at the end of storage. Although there was a decrease of approximately 3‐4 logarithmic units in the number of yeast‐mold at the beginning of the storage (day 0) after the ozonation process, a sudden increase was observed on the 15th day of the storage, and then it tended to decrease generally by following a fluctuating course. The hardness of olives produced using KCl (3.5% NaCl + 3.5% KCl) decreased significantly after the 6 month storage period that caused a lower acceptability.

Abstract:This study investigated the potential of high-amylose wheat flour (Svevo-HA) to enhance the dietary profile of tarhana, a traditional Mediterranean fermented cereal yogurt mixture. The moisture content of tarhana powders ranged from 7.81% to 11.64%. Color parameters varied depending on the type of flour used, with Svevo-HA samples demonstrating decreased L* values and increased a* and b* values. Mineral compositions differed significantly among tarhana samples, with higher levels of K, Mg, Mn, Fe, Cu, and Zn observed in samples prepared with Svevo-HA. Gallic acid was identified as the major phenolic compound in all the tarhana samples for free fraction, while ferulic acid was determined as the major phenolic compound for its bound form. Supplementation of tarhana soups with heat-treated Svevo-HA flour increased the resistant starch content and decreased in vitro glycemic index value compared to soups prepared with conventional wheat flour. These findings highlight the potential of utilizing Svevo-HA flour to develop healthier versions of traditional foods.

Abstract:In this study, co-cultivation of lactic acid bacteria (Lb. plantarum 45MK-30, Lb. fermentum 29GT-19) and yeasts (Saccharomyces cerevisiae 06B-39, Kazachstania humilis KCO-60 and Pichia membranifaciens 11G-11) on the quality of sourdough bread the effect was studied. Two different fermentation conditions were used for this (I and II fermentation). While cell density and pH value of microorganisms were close to each other in I fermentation, a decrease in these values was observed in II fermentation. Also, all doughs exhibited elastic behavior. It can be said that the textural feature of sourdough breads is softer compared to both controlled acidified (CA) bread and non-sourdough (flat dough, CY) bread. Another parameter examined in breads was the evaluation of volatile components by HS-GC / MS. It was observed that breads produced by co-cultivation had more volatile components than plain dough bread.

Effect of the fermentation temperature on the degradation of phytic acid in whole-wheat sourdough bread

Abstract:Whole-wheat bread is commonly consumed all over the world, in part because of its high nutritional content. These breads have high levels of phytic acid, which can chelate divalent minerals. In this study, lactic acid bacteria (LAB) were isolated from sourdoughs to screen for extracellular phytase activity and to determine the strains showing the highest activity for use in sourdough preparation. Phytase-active LAB strains were identified by 16S rRNA sequencing. The highest extracellular phytase activities were determined to be 803.95 U/mL and 797.88 U/mL, observed with Lactobacillus brevis HEB33 and Lactobacillus plantarum ELB78, respectively. Sourdough fermentation was performed at 25, 30 and 35 °C in order to determine the optimum temperature for the degradation of phytate. To investigate the temperature and strain effects on bread quality parameters, specific volume, texture, color and sensory analyses were performed along with analyses of the phytic acid and mineral contents. The highest phytate degradation was found in sourdough bread prepared with both Lactobacillus brevis HEB33 and Lactobacillus plantarum ELB78 fermented at 25 °C. The addition of spontaneously fermented sourdough at all tested temperatures, as well as the fermentation of sourdoughs at 35 °C, had negative effects on the quality parameters and sensory evaluation of the bread samples.
Comparison of wet and dried chickpea yeast in breadmaking

Abstract:Background: Chickpea yeast (CY), initiated by spontaneous fermentation of coarsely-ground chickpea in water, is considered a variant of conventional sourdough and contributes somewhat similarly to bakery products. As the preparation of wet CY prior to each baking process poses certain difficulties, its usage in dry form has been gaining interest. In this study, CY was used either directly in freshly prepared wet form or in freeze-dried and spray-dried forms at 50, 100 and 150 g kg-1 levels (all on 14% moisture basis) in substitution with wheat flour to compare their effects on bread properties. Results: Utilization of all forms of CY did not noticeably change the contents of protein, fat, ash, total carbohydrate and damaged starch in the wheat flour-CY mixtures. However, falling numbers and sedimentation volumes of CY-containing mixtures decreased significantly, due probably to the increase in the amylolytic and proteolytic activities during chickpea fermentation. These changes somewhat corresponded to improved dough processability. Both wet and dried CY samples reduced pH levels of doughs and breads, and increased probiotic lactic acid bacteria (LAB) count. Total phenolic contents, antioxidant capacities and flavor scores of CY-containing breads were significantly enhanced. However, CY usage slightly influenced yield, moisture content, volume, color and hardness values of breads. Conclusion: Effects of wet and dried forms of CY on bread properties were quite comparable, indicating that CY can be used upon properly drying similarly to the conventional wet form. © 2023 Society of Chemical Industry.

Abstract:Yufka paste was prepared by adding concentrations of Lactobacillus plantarum. Microbial shelf life of yufka paste was improved using green preservative and calcium propionate. Green preservatives improved the sensory properties of the product while maintaining the physicochemical characteristics over time. Considering the importance of reducing the use of chemical preservatives in food and the increasing attention of consumers to consume food products with minimal additives, the main goal of this research was to study the effect of use of chemical (calcium propionate) and biological (Lactobacillus plantarum) preservatives on increasing shelf life of yufka paste considering its physicochemical and microbial characteristics. For this purpose, three samples of yufka paste were prepared by adding concentrations of 103, 105, and 107 cfu/mL of L. plantarum individually and three samples of paste were prepared by adding the same amount of bacteria in combination with 0.3% calcium propionate and these samples were compared with the control sample (without preservative) and the sample only containing 0.3% calcium propionate. Abstract:This study aimed to evaluate the influence of sourdough fermentation on the estimated glycemic index (eGI), in vitro starch digestibility, and textural and sensory properties of eight experimentally prepared sourdough breads. Wheat and whole wheat flour bread samples were produced under different fermentation conditions (25 °C and 30 °C) and fermentation methods (type-1 and type-2). In type-1 fermentation, sourdough was obtained via spontaneous fermentation. Indigenous strains (Lactobacillus brevis ELB99, Lactiplantibacillus plantarum ELB75, and Saccharomyces cerevisiae TGM55) were used for type-2 fermentation. Fermentation type and temperature significantly affected eGI, the hydrolysis index (HI), the starch fraction, and the textural properties of the samples (p < 0.05). The resistant starch (RS) content increased after fermentation, while rapidly digestible starch (RDS), HI, and eGI decreased. RS values were significantly higher in type-2 than in type-1 at the same temperature for both flour types (p < 0.05). At 25 °C, RS values were higher in both fermentation types. In the white flour samples, eGI values were in the range of 60.8–78.94 and 62.10–78.94 for type-1 and type-2, respectively. The effect of fermentation type on eGI was insignificant (p < 0.05). In the whole flour samples, fermentation type and temperature significantly affected eGI (p < 0.05). The greatest eGI decreases were in whole wheat sourdough bread at 30 °C using type-2 (29.74%). The 30 °C and type-2 samples showed lower hardness and higher specific volume. This study suggests that fermentation type and temperature could affect the eGI and the textural and sensory properties of sourdough bread, and these factors should be considered during bread production. The findings also support the consumption of wheat and whole wheat breads produced by type-2 fermentation due to higher RS and slowly digestible starch (SDS) and lower RDS and eGI values.

Evaluation of microtextural properties of sourdough wheat bread obtained from optimized formulation using scanning electron microscopy and image analysis during shelf life

Abstract:The aim of this study was to evaluate the microtextural properties of optimized wheat bread formulation consisting sourdough (A) prepared with two different fermentation methods [spontaneous fermentation (F1) versus starter of lactic acid bacteria added fermentation (F2)], instant active dry yeast (B) and wheat bran (C) during shelf life. The optimized levels for F1 were 11.45 g 100 g-1 for sourdough, 1.10 g 100 g-1 for dry yeast and 1.58 g 100 g-1 for wheat bran and for F2 6.99 g 100 g-1 for sourdough, 1.02 g 100 g-1 for dry yeast and 38.84 g 100 g-1 for wheat bran. The addition of sourdough significantly decreased the diameters of starch granules of sourdough breads, and affected shape and surface apparance of starch granules. The retrogradation phenomena during storage was explained with the change of interaction between starch granules and protein matrix. The F1 fermentation method was found to be more effective in terms of bread textural properties examined.

Yogurts containing only probiotic bacteria were observed for 12 hours of fermentation, and yogurts containing both probiotic bacteria and yogurt bacteria were followed for 8 hours of fermentation. The use of yogurt culture increased the lactic acid contents, hardness values and antioxidant activities - using ABTS (2,2-azino-di-(3-ethylbenzothialozine sulfonic acid) and DPPH (2,2-Diphenyl-1-picrylhydrazyl) methods - and exhibited a shortened fermentation time. DPPH radical scavenging activity of all probiotic yogurt samples without yogurt culture decreased significantly at the end of fermentation (after 8 hours) compared to the beginning of fermentation (p<0.05). Across all the samples, L. acidophilus and B. lactis-containing yogurts exhibited the maximum viability at the end of fermentation. L. casei could not maintain viability at the end of the 8 hour fermentation. A high positive correlation was determined between antioxidant activity (ABTS) and the free amino acid results of probiotic yogurts containing yogurt culture. In this study, it was concluded that antioxidant activity, probiotic viability and amino acid content of probiotic goat yogurts changed with fermentation time.
The effects of fermentation time on sourdough bread: An analysis of texture profile, starch digestion rate, and protein hydrolysis rate

Abstract:To ensure the best quality bread, it is important to consider the speed of digestion of starch and proteins, as well as how time fermentation and storage time influence the rate of starch digestion and the texture of the bread. This study compared the effect of fermentation time and days of storage on the texture, physicochemical, protein and starch digestibility of sourdough bread. Texture profile analysis showed that the fermentation time in recently baked sourdough bread affects hardness, chewiness, and springiness. The electrophoretic profile showed a decrease in band thickness with increase in fermentation time, consistent with a higher percentage of protein digestion. While fermentation time did not significantly affect rapidly digestible starch (RDS) and slowly digestible starch (SDS), storage time resulted in a decrease in RDS and an increase in SDS. Sourdough breads had higher levels of resistant starch (RS). The digestibility characteristics of protein and starch, as well as texture properties, are significantly influenced by fermentation and storage time. The evidence suggests that sourdough bread has the potential to improve the digestion of protein and to effectively regulate the glycemic response, which is due to its higher levels of SDS and RS.
