Abstract:Olive oil is not only an essential culinary element in the diet of Mediterranean countries, but it is also becoming an increasingly attractive element from a tourism perspective. The olive grove landscape, ancient olive trees, and oil mills are increasingly attracting tourists eager to experience this type of tourism. This research analyzes the profile of the oleotourist in the four designations of the province of Córdoba (Spain). SARIMA models have been applied to predict oleotourism demand, resulting in a growing demand, which will create jobs in the towns dedicated to this cultivation. The main problem is the seasonality of this demand, which can be corrected by creating complementary activities such as olive oil festivals, cooking workshops, or tasting sessions. A logit model has also been developed to determine which variables influence the probability of being satisfied with the oleotourism experience, with environmental conservation and travel cost being the most influential. Regarding the bivariate analysis, motivation and satisfaction with the trip are closely related, as is the personal classification of the oleotourist; the more they know about the world of olive cultivation, the more satisfied they are with their experience.

Abstract:Spain is the leading producer of olive oil. For Spain, olive oil and olive growing are not only an important source of economic wealth, but also symbols of its culture and gastronomy renowned both nationally and internationally. However, in rural areas where the olive is the primary source of income for resident families, proposals are being sought for activities that break away from the seasonality in income represented by dependence on agriculture. Among all these proposals there is one that is oleotourism, which is beginning to gain ground because of its facet of culinary tourism. This is due to its uniqueness, and it can also be considered an initiative for sustainable rural tourism. Given the interest aroused by this type of initiative, both on the part of the public administration and also the olive sector, this study involves the demand for oleotourism in Andalucia and is a strategic analysis of oleotourism as a new market sector in the south of Spain.

Abstract:In recent years, gastronomy has become a fundamental motivation to travel. Learning how to prepare gastronomic dishes and about the raw materials that compose them has attracted increasing numbers of tourists. In Andalusia (region of southern Spain), there are many quality products endorsed by Protected Designations of Origin, around which gastronomic routes have been created, some visited often (e.g., wine) and others remaining unknown (e.g., ham and oil). This study analyses the profile of gastronomic tourists in Andalusia to understand their motivations and estimates the demand for gastronomic tourism using seasonal autoregressive integrated moving average (SARIMA) models. The results obtained indicate that the gastronomic tourist in Andalusia is very satisfied with the places he/she visits and the gastronomy he/she savours. However, the demand for this tourist sector is very low and heterogeneous; while wine tourism is well established, tourism focusing on certain products, such as olive oil or ham, is practically non-existent. To obtain a homogeneous demand, synergies or pairings should be created between food products, e.g., wine-ham, oil-ham, etc., to attract a greater number of tourists and distinguish Andalusia as a gastronomic holiday destination.

Abstract:Oleotourism (olive oil tourism) is a new form of gastronomic tourism that satisfies increasingly challenging tourist demand, especially in the wake of the pandemic and for tourists who seek not only quality food products but also a safe environment to enjoy their chosen activity. Córdoba is a province in southern Spain where olives play a very important role, accounting for 50% of its cultivated area, and whose agricultural activity can be complemented with tourism due to its 189 oil mills that can welcome visitors for oil tasting. However, this type of tourism is not seeing an expected boom. This research analyzes, through a varimax analysis, the factors that attract and drive oleotourists as well as the components of such tourism. As a result, four principal components related to tourists and tourism offers were obtained, finding a high degree of satisfaction of oleotourist with the routes explored as well as a lack of knowledge of this type of tourism in international markets.

Abstract:This work aims to highlight tourism based on gastronomy, heritage and olive oil-related activities. These activities enhance the knowledge about the product itself and its links with culture and local traditions. Olive oil tourism is based on a typical gastronomic product of internationally recognised quality. This type of tourism boosts sustainable destinations capable of introducing and promoting the consumption of local products. In addition, it favours the implementation of different activities in rural settings, such as routes through the olive groves, gastronomic markets, educational initiatives, historical events, etc. This study analyses the development of olive oil tourism in the district of La Serena in Extremadura (Spain). The study involved 208 tourists that were asked about their experience on oil tourism during their trip. The results emphasize the great potential of development that olive oil tourism can achieve in rural settings as sustainable destinations. From the results obtained, managers of rural settings with a great olive oil tradition can base their tourism strategies on the gastronomic and cultural context of this local product.

Abstract:Olive oil tourism is a recent type of rural tourism; hence, it remains a field of research that is still overlooked. Therefore, it is fitting to provide a quantitative overview of the literature regarding this promising area. Drawing on an analysis of 42 articles on olive oil tourism indexed in the Web of Science, it becomes clear that olive oil tourism is predominantly a Spanish phenomenon, as the large majority of the authors are affiliated with academic entities located in Spain. The outlets with the highest number of papers published on olive oil tourism include Sustainability, Tourism and Hospitality Management, and the International Journal of Gastronomy and Food Science, which confirms the multidisciplinarity of this phenomenon. The demand approach and particularly the focus placed on tourists' psychological traits have garnered considerable attention. In contrast, the offer approach is still in an incipient stage, which hinders the understanding of the strategies used by the stakeholders in the field. Considering the potential that olive oil tourism represents for the sustainability of rural areas, there is a need for further research in the field, particularly focusing on the product itself and on institutional frameworks and governance.

Abstract:El turismo es un sector económico que ha alcanzado en el siglo XXI un notorio auge, tanto a nivel nacional como internacional, de acuerdo con los datos que ofrecen diferentes fuentes. Dentro de este sector existen numerosas modalidades de carácter específico, siendo una de ellas el turismo cinegético. En este trabajo se aborda una de las cuestiones menos conocida de esta tipología turística: el perfil de la demanda. Para ello se ha recurrido al uso de fuentes primarias recopiladas por el Observatorio Turístico de Extremadura, vía encuesta, en las oficinas de turismo de la comunidad autónoma. Los resultados han sido tratados mediante la aplicación de técnicas estadísticas descriptivas. De este análisis se han obtenido importantes resultados que han permitido generar conocimiento sobre las características del perfil de la demanda. Entre los resultados obtenidos cabe destacar la singular caracterización sociodemográfica, las peculiares características del viaje realizado y el indudable interés que tienen estos turistas por el desarrollo de otras actividades distintas a las de la práctica de las artes venatorias.

Este trabajo analiza la evolucion reciente de las exportaciones andaluzas de aceite de oliva virgen, explicando las estrategias seguidas por las empresas para internacionalizarse. In an international context of progressive deregulation, the chances of the specialized areas in olive oil production depend largely on how it is adapting to the conditions prevailing in the world market. Abstract:This study aimed to analyze the interest, willingness to pay, and profile of tourists participating in specific agrotourism activities linked to extensive livestock farming in order to encourage the development of those activities that are most demanded by tourists, as well as to support the proposals for improvements to promote this kind of tourism in the region of Andalusia (Spain). For this purpose, a survey was conducted, which was organized into six sections: (i) sociodemographic data, (ii) general aspects of tourism, (iii) rural tourism, (iv) livestock farming and tourism, (v) benefits of extensive livestock farming, and (vi) tourism activities linked to livestock farming. A total of 892 responses were received, out of which 753 were analyzed. The results show that the respondents are interested or motivated by the proposed activities. The most attractive activities are those related to livestock farming, which involve some kind of workshop on the production of handicrafts. Despite tourists having low-to-medium knowledge of extensive livestock farming, they all express a highly positive perception of the associated attributes. Developing strategies to enhance the willingness to pay for agrotourism activities is crucial, with the overall experience being a key element of their success.
La exportación de aceite de oliva virgen en Andalucía: Dinámica y factores

This work analyses the exporting dynamics leaded by andalusia olive oil companies during the last decade, described by means of economic and institutional conditions and particularly, the sectorial ones, which are particular of the field we are working in, that determine a poor progress of the opportunities that global market offers, and in which the demand of virgin olive oil is increasing. Abstract:Olive tree growing has a very important role in the productive specialisation process the Andalusian agriculture has been going through during the last years. Nowadays, the Andalusian production represents 43,1% of the total European Community production and 36,7% of the world’s production. Moreover, various agro-industrial establishments participate in the elaboration of olive oil and various products are obtained. This work starts with the analysis of the industrial organisation of the olive oil sector and the transformations the value chain has undergone. It continues with the study of the most important issues of the methodology applied during the investigation. Thereafter the territorial perspective is included and the concentration processes of the agrifoodstuffs industries are dealt with. Furthermore, the role of large food manufacturing companies and the retailing and distribution industry in the olive oil value chain is studied, as well as the return agri-foodstuffs industries obtain from the olive oil commercialisation is estimated. Finally, the most important conclusions of this investigation are presented.

Abstract:Traveling to learn about the gastronomy of a destination is becoming increasingly important among tourists, especially in the wake of the pandemic. Quality foods endorsed by protected designations of origin (PDOs) are increasingly in demand, as are experiences related to their production processes. In this study, the seven PDOs in the province of Córdoba (Spain) are analyzed. These PDOs produce olive oil, wine or ham. A field study was performed, whereby 315 gastronomic tourists who visited a gastronomic route or a PDO in Córdoba were surveyed. The objective was to characterize the profile of visiting tourists and to anticipate future demand using ARIMA models. The results indicate that the growth in gastronomic tourism in Córdoba is lower than that in the wider region, and that there are no significant differences among the different profiles (oil tourist, enotourist and ham tourists) due in part to the fact that most tourists travel from nearby regions. The novelty of this study is that three products are analyzed, and strategies are proposed to deseasonalize this type of tourism, for example, by creating a gastronomic brand that represents Córdoba and selling products under that brand (especially in international markets), by highlighting raw materials and prepared dishes and by making gastronomy a complement to heritage tourism in the city and rural tourism in the province.

Abstract:In recent years, gastronomy has established itself as one of the key elements for the enhancement, sustainable and consolidation of tourist destinations. The aim of this paper is to contribute to the advancement of knowledge on gastronomic tourism in European countries, specifically in the analysis of the relationship between gastronomy, culture and tourism as the research focuses on the city of Córdoba, Spain. The methodology of this research involved conducting surveys with foreign travelers who were lunching or dining at various restaurants in the historic area, and these facilities were characterized by having in their gastronomic menus major typical culinary products of the city using the concept of tapas, i.e., the presentation of gastronomy through small portions of food. The results of the study indicate that the healthy component of the gastronomy represents the main dimension. Based on the detected dimensions, three types of international visitors are established (healthy-cultural tourist, cultural tourist and generic tourist) which are considered valid and useful for segmenting the market. This highlights the importance given to gastronomy by tourists as part of the cultural identity of a place and the satisfaction achieved through the gastronomy of the city of Córdoba.

Abstract:The profile of tourists during the COVID-19 pandemic is changing toward those seeking health, safety and quality products. One of the modalities that best adapts to these needs is gastronomic tourism and, within this segment, wine tourism (enotourism), which can be enjoyed in many areas across the world. The great diversity of grapes, climates, terrains and winemaking processes gives rise to an enormous variety of wines that ensures that no two wines are alike. The current situation of the tourism market necessitates enhancing the uniqueness of areas that offer differentiated products, helping to position such locations as benchmarks for gastronomic tourism. Gastronomic routes provide a way to unify and benefit rural areas through the recently increased demand of tourists seeking to experience regional foods. In this study, the Montilla-Moriles Wine Route is analyzed with the objective of forecasting the demand (using autoregressive integrate moving average, ARIMA models), establishing a tourist profile and calculating the probability that a wine tourist is satisfied with the visit based on their personal characteristics (logit model). The results obtained indicate a slight increase (3.6%) in wine tourists with a high degree of satisfaction, primarily derived from the gastronomic or catering services of the area, from the number of wineries visited, from the treatment received and from the age of the tourist. Consequently, a high percentage of these tourists recommend the route. By increasing the demand for enotourism in this area and applying the results obtained, marketing initiatives could be established, particularly for wine festivals to improve this tourist segment and generate wealth in that area.

Abstract:This study discusses the economic power and international fame of the Autonomous Community of Andalusia’s tourist sector. A review of the economics literature justifies our measurement of tourism’s economic impact on the tourist sector. The main contribution is an estimation of foreign tourist expenditure in Andalusia, the main Spanish tourist destination per number of overnights. Drawing on this estimate, the input–output methodology is applied to determine the global impact of this expenditure on the region. The study differentiates the three types of tourism of the region: coast, urban interior and rural interior.

Abstract:Summary This paper analyses the strategy developed thus far to have Andalusian olive-growing landscapes included as a Cultural Landscape on the World Heritage List (UNESCO). The research method used is descriptive, reflexive and prospective, and seeks to achieve a systematic and holistic overview of a complex reality. In addition to the corresponding bibliographical review, the research has been nourished by qualitative information from land surveys (field visits) and interviews with experts consulted during the preparation of the two technical dossiers of the candidacy produced so far. The results include the rationale for Outstanding Universal Value and the basis of the protection and management plan for the property. Subsequently, the paper discusses the possibilities for rural development that can be derived from this initiative through the virtuous interactions between the property, the region and the food (olive oil) obtained from traditional olive groves.

Abstract:Iberian ham is a food product of great quality endorsed by Protected Denominations of Origin, which is beginning to be marketed as a tourist product, and visits to pastures, ham dryers, etc., are becoming tourist attractions in the rural areas of Andalusia. In this research, a factor analysis with VARIMAX rotation is carried out to determine the factors that influence the development of ham tourism. Five components are determined, of which the supply factor is one of the most important. Pull factors are highlighted as the local gastronomy and heritage, among others, and push factors include visiting dryers, pastures, and ham museums. Based on these results and the descriptive analysis of the profile of the ham tourist, it is found that the ham tourist is very satisfied with the visit made, and that the tourist would repeat the experience. However, it is observed that it is necessary to create routes combined with other better known gastronomic products, such as wine, and carry out marketing campaigns to publicize this tourist product in the national and international market, because at present it is local tourists who perform this type of tourism.

Abstract:In recent decades, there has been a change in tourists' tastes; they want to experience something novel. To satisfy this demand, a new type of tourism, known as "dark tourism", has arisen; it has various modalities, among which cemetery tourism and ghost tourism stand out, in addition to very different motivations from those of the cultural tourist. In this type of tourism, cemeteries are not visited to appreciate their architecture or heritage but to explore a morbid curiosity about the people buried there; ghost tourism or paranormal tourism seizes on the desire to know the events that occurred there and tends to have macabre content. This study analyzes dark tourism in the province of Córdoba in southern Spain with the aim of knowing the profile of the tourist and his motivation. This study additionally will forecast the demand for this type of tourism, using autoregressive integrated moving average (ARIMA) models, which allow us to know this market's evolution and whether any promotional action should be carried out to promote it.

Abstract:This paper analyzes the perception and behavior of active tourism companies that provide outdoor physical sports activities in emerging tourist destinations in Cordoba, an inland province of southern Spain. The active tourism supply of registered businesses was analyzed using fieldwork data and more than 30 variables including training and qualification of human resources, business vision of demand, marketing and promotion strategies, and perceptions of supply trends. To this end, a quantitative-qualitative empirical study was performed together with in-depth interviews of key stakeholders. Official registry sources were also used to complement the data. The results show a fragmented network of micro-SMEs that are functionally isolated from the rest of the tourism supply and display an intuitive and poor market-oriented behavior due to the inadequate management of their client portfolio. Such management models make it difficult for these businesses to take advantage of key strategic assets to increase profitability and achieve a competitive and sustainable advantage.
