Consumer Preference of Away-From-Home Sustainable Salmon Consumption: East vs. West Cultural Comparison

Abstract:Sustainable salmon consumption away from home in China and US are compared in this paper. A focus on the cultural differences of food cultures between consumers from China and US is investigated by surveys distributed in both countries. By collecting web-based survey data from both China and the US, the discrete choice experiments and random parameter logit models were used for empirical analysis. The consumers’ preference and willingness to pay for attributes, such as eco-labeling, farming method, country of origin, and cooking methods were analyzed and compared for both nations. Results show that cultural difference plays an important role in consumers’ preferences of the ecolabels of salmon in away-from-home consumption. Particularly we estimated Chinese and the US consumer preferences for MSC ecolabel and the impacts of different types of cooking methods on salmon consumption away from home. The results indicate that different market strategies of advertising ecolabeled salmon in different countries are needed.
