Abstract:This study describes the synthesis of a new class of surfactants that is based on the bioderived building blocks fructose, fatty acid methyl esters (FAME), and hydroxy propionitrile (cyanoethanol, 3-HP). The synthesis is scalable, is carried out at ambient conditions, and does not require chromatography. The produced surfactants have excellent surfactant properties with critical micelle concentrations and Krafft points comparable to current glucose-based surfactants.

What problem does this paper attempt to address?
The problem that this paper attempts to solve is to develop a new fructose - based surfactant to improve the sustainability and environmental - friendliness of surfactants. Specifically, through the selective Fischer glycosylation reaction, the researchers reacted fructose with 3 - hydroxypropionitrile (3 - HP) to generate cyanomethyl - β - fructopyranoside, then hydrogenated it into aminoethyl - β - fructopyranoside, and finally carried out an amidation reaction with fatty acid methyl ester (FAME) to prepare a series of new surfactants with excellent surface - active properties. ### Research Background Most of the currently used surfactants are based on petrochemicals, which are not only unsustainable but may also be harmful to organisms or degrade into toxic substances in the environment. In order to improve the sustainability of surfactants, researchers hope to obtain starting materials from renewable resources and ensure that these surfactants are non - toxic, non - irritating, not harmful to the environment, and can degrade into non - toxic products. ### Main Contributions 1. **Synthesis of New Surfactants**: - Through the selective Fischer glycosylation reaction, cyanomethyl - β - fructopyranoside was successfully synthesized. - Cyanomethyl - β - fructopyranoside was converted into aminoethyl - β - fructopyranoside after hydrogenation. - Finally, a series of fructose - based surfactants were prepared through the amidation reaction with fatty acid methyl ester. 2. **Environmental - friendliness**: - Fructose, fatty acid methyl ester and 3 - hydroxypropionitrile were used as starting materials, all of which are derived from renewable resources. - The synthesis process was carried out at room temperature and did not require chromatographic separation, reducing energy consumption and environmental pollution. 3. **Performance Evaluation**: - By measuring the critical micelle concentration (CMC) and surface tension, it was verified that the newly synthesized surfactants had excellent surface - active properties. - Compared with the existing glucoside - based surfactants, the newly synthesized fructose - based surfactants showed similar or even better performance. ### Conclusion The researchers have successfully synthesized a new type of fructose - based surfactants. These surfactants not only have excellent surface - active properties, but are also more environmentally friendly and sustainable. This achievement provides new ideas and methods for the development of a new generation of green surfactants.
