Abstract:In modern industrialized societies, the focus on healthy eating has increased significantly across multiple sectors, including the media, public policy, expert opinion, and public awareness. The aim of this research was to explore the perceptions of healthy eating and the barriers to adopting a healthy diet among undergraduate students in Human Nutrition and Dietetics (HND) and Food Science and Technology (FST) degrees in Spain. An exploratory and descriptive cross-sectional study was conducted using a qualitative and quantitative methodology and convenience sampling. Two focus groups and a questionnaire were utilized (300 participants from all academic years completed the survey). Differences in definitions of healthy eating and perceived barriers were found between genders and students at different stages of training (p < 0.05). In their understanding of healthy eating, the students placed importance on balance, variety, moderation, and individual factors. Although students considered it easy to follow a healthy diet, family's eating habits, time availability, and emotional states were found to be the main barriers to the implementation of healthy practices. The obtained data supports the need to critically address perceptions of healthy eating throughout the training of nutrition and food science professionals. The insights obtained on the perceived barriers highlight the importance of considering both individual and environmental factors.

Abstract:Introduction: Dietary patterns high in healthy plant foods play an important role in modulating the gut microbiome and promoting cardiometabolic health. Little is known on the diet-gut microbiome relationship in U.S. Hispanics/Latinos, who have a high burden of obesity and diabetes. Hypothesis: Three healthy dietary patterns - the alternate Mediterranean diet (aMED), the Healthy Eating Index (HEI)-2015, and the healthful Plant-based Diet Index (hPDI), will be associated with gut microbiome composition in U.S. Hispanic/Latino adults, and healthy-diet-related species will be related to favorable cardiometabolic traits. Methods: HCHS/SOL is a multi-site community-based cohort. At baseline (2008-11), diet was assessed via two 24-hr recalls. Shotgun sequencing was performed on stool samples collected in 2014-17 (n=2,985). Analysis of Compositions of Microbiomes 2 (ANCOM2) was used to identify associations of dietary pattern scores with gut microbiome species and functions, adjusting for sociodemographic, behavioral, and clinical covariates. Results: Better diet quality according to multiple healthy dietary patterns was associated with higher abundance of species from class Clostridia, including [Eubacterium] eligens , Butyrivibrio crossotus , and Lachnospiraceae bacterium TF01-11 , as well as functions related to fiber fermentation (e.g. pyruvate:ferredoxin oxidoreductase). Poorer diet quality was associated with higher abundance of Acidaminococcus intestini , as well as functions of manganese/iron transport, adhesin protein transport, and nitrate reduction. Healthy diet pattern-enriched Clostridia species were related to more favorable cardiometabolic traits such as lower triglycerides ( Figure 1 ). Conclusions: Healthy dietary patterns in this population are associated with a fiber-fermenting gut microbiome, consistent with previous studies in other racial/ethnic groups. Gut microbiota may be involved in the beneficial effect of higher diet quality on cardiometabolic disease risk.

Abstract:In recent years, although life expectancy has increased significantly, non-communicable diseases (NCDs) continue to pose a significant threat to the health of the global population. Therefore, eating habits have been recognized as key modifiable factors that influence people's health and well-being. For this reason, it is interesting to study dietary patterns, since the human diet is a complex mixture of macronutrients, micronutrients, and bioactive compounds, and can modulate multiple physiological processes, including immune function, the metabolism, and inflammation. To ensure that the data we acquired were current and relevant, we searched primary and secondary sources, including scientific journals, bibliographic indexes, and databases in the last 15 years with the most relevant articles. After this search, we observed that all the recent research on NCDs suggests that diet is a critical factor in shaping an individual's health outcomes. Thus, cardiovascular, metabolic, mental, dental, and visual health depends largely on the intake, habits and patterns, and nutritional behaviors. A diet high in processed and refined foods, added sugars, and saturated fats can increase the risk of developing chronic diseases. On the other hand, a diet rich in whole, nutrient-dense foods, such as vegetables, fruits, nuts, legumes, and a high adherence to Mediterranean diet can improve health's people.

Abstract:The increasing world population, impact of food production on climate change, and ongoing issues with diet-related diseases (e.g., malnutrition and obesity) are global major challenges. Recent advances in how food structure impacts the extent and kinetics of uptake of nutrients and its consequent effects on the physiological outcomes are beginning to shift our understanding of nutrition. This understanding is important to designing future foods that provide optimum nutrient bioavailability and deliver healthy outcomes. We discuss perspectives and scientific challenges in understanding the complex relationship between food structure/matrix modification during the digestion process and the absorption of nutrients as well as designing food structures with more sustainable materials.

Shaping Physical, Economic, and Policy Components of the Food Environment to Create Sustainable Healthy Diets

Abstract:Background: Sustainable healthy diets are those dietary patterns that promote all dimensions of individuals' health and well-being; have low environmental pressure and impact; are accessible, affordable, safe, and equitable; and are culturally acceptable. The food environment, defined as the interface between the wider food system and consumer's food acquisition and consumption, is critical for ensuring equitable access to foods that are healthy, safe, affordable, and appealing. Discussion: Current food environments are creating inequities, and sustainable healthy foods are generally more accessible for those of higher socioeconomic status. The physical, economic, and policy components of the food environment can all be acted on to promote sustainable healthy diets. Physical spaces can be modified to improve relative availability (ie, proximity) of food outlets that carry nutritious foods in low-income communities; to address economic access certain actions may improve affordability, such as fortification, preventing food loss through supply chain improvements; and commodity specific vouchers for fruits, vegetables, and legumes. Other policy actions that address accessibility to sustainable healthy foods are comprehensive marketing restrictions and easy-to-understand front-of-pack nutrition labels. While shaping food environments will require concerted action from all stakeholders, governments and private sector bear significant responsibility for ensuring equitable access to sustainable healthy diets.

Abstract:Background. Climate change and global health are inextricably linked. Thus, health systems and their professionals must adapt and evolve without losing quality of care. Aim(s). To identify health and environmental co-benefits derived from a sustainable diet and promotion strategies that favor its implementation. Methods. A systematic search for articles published on sustainable diets and human/planetary health published between 2013 and 2020 was conducted on the databases PubMed, Cinahl, Scopus and Trip from 4 to 7 May 2020 in accordance with the PRISMA guideline. Results. A total of 201 articles was retrieved, but only 21 were included. A calorie-balanced diet mainly based on food of plant origin that would allow the attainment of 60% of daily caloric requirements and a low protein intake from animal foods (focusing in fish and poultry) could significantly reduce global morbi-mortality and the dietary environmental impact maintaining a framework of sustainability conditioned by the consumption of fresh, seasonal, locally produced and minimally packaged products. Discussion. The implementation of sustainable diets requires working on the triangulation of concepts of food–health–environment from schools and that is permanently reinforced during all stages of the life by healthcare workers, who should establish the appropriate modifications according to the age, gender and health situation.

Abstract:The perception that food affects our health has increased over the past fifty years in industrialised Western countries. The notion of "healthy food" has become ubiquitous in medical, political, and media discourse as well as in the discourses of the lay population. This study seeks to understand the social representations of "healthy food" of Brazilian, Spanish and French dietitians and young laywomen. A qualitative and comparative methodology based on 131 individual semi-structured interviews was set up. According to the analysis of the discourses, the notion of "healthy food" is ambivalent and polysemic. Scientific-nutritional rationality is not the only way to think about "healthy food". Two main ways of categorising "healthy foods" are observed in the three countries. They are based on eating analysis criteria that referred to diverse value systems and different scientific, symbolic and moral rationalities: on the one hand, a physiological, nutritional and functional conception, and on the other, an "eco-ideological" conception that took into account production, culture and distribution methods. Though dietitians have a greater technical knowledge of nutrients and metabolic processes than laywomen, professionals and young laywomen, mainly within the same nationality, shared similar discourses concerning the notion of "healthy food", revealing patterns that differentiate each nationality. Taking together, the results reveal that although medical-nutritional discourses are disseminated internationally, discourses on "healthy food" are constructed taking into account social, cultural, symbolic and moral dimensions. These discourses are linked to a historical and sociocultural context.

Abstract:Over 60 diseases, civilization cardiovascular system diseases (hypertension, myocardial infarction, ischaemia legs, stroke, especially), metabolic diseases (metabolic syndrome, type 2 diabetes mellitus, osteoporosis), and cancers (gastric carcinoma, prostatic carcinoma, colonic carcinoma, breast carcinoma in women) are as a result of the defective nutrition. Even though human genome did not change essential but a diet and a lifestyle of contemporary human being radical differs from prototype of our ancestors. One take notice of world epidemic of over weight and obesity. Contemporary diet should realize following aims: a/prevents diseases, b/ does not create health risk and c/ supplies with good taste and in this way secures the most of quality life. Author discusses sources and causes the contamination of food by free radicals, heavy metals, glucotoxins and other chemical compounds. Next, presents the newest model of the food pyramid and the role of polyunsaturated fatty acids in the prevention of civilization diseases. Special attention paid on the health profits as a result consumption of minimal processed food and marine fishes.

Abstract:Consumer awareness of food safety and nutrition is a major issue in relation to healthy lifestyles and disease prevention. Improper consumer food management has been implicated in a large number of cases of foodborne illnesses. To reduce the risk of foodborne illness, consumers must be willing to change behaviours that are not consistent with safe food storage and preparation practices. Change in such behaviours is strongly related to consumer knowledge of proper food handling practices. At the same time there is public consciousness of the role of diet in contributing to the health status, but this awareness has not led to sufficient improvement of eating habits. What people buy and eat and the way they manage food depends not only on the individual but also on social, cultural, economic, and environmental factors. Identifying an effective strategy to improve consumers’ behaviour is a concern for politicians and health promoters. Non-targeted spreading of generic information is one strategy, but seems to be relatively unsuccessful. This paper describes an innovative and effective methodology to improve the level of consumer awareness towards healthier food choices and safer behaviours based on a holistic approach. This strategy could be adopted to better disseminate information regarding healthy foods on a large scale and at a relatively low cost, obtaining significant benefits in terms of primary prevention and contributing to the amelioration of food management at the consumer level.

Ecology of Food and Nutrition

Abstract:<span><i>Ecology of Food and Nutrition</i> (EFN) promotes scholarly discussion and engagement on the holistic and cross-cultural dimensions of the study of food and nutrition. Articles published in this journal focus on foods and food systems not only in terms of their utilization to satisfy human nutritional needs and health, but also how social and cultural factors relate to food, food cultures, and nutrition. Only a handful of journals publish articles that explicitly address the intersections of food and nutrition, biology and culture, and policy and practice from a holistic and global perspective. It is this kind of scholarship that EFN seeks to promote. This issue of EFN includes seven articles based on scholarly research conducted in countries South Africa, Ethiopia, Korea, India, Iran, and the United States. The articles focus on a range of topics including the concordance/discordance related to nutritional knowledge and food preferences of parents and children, household food security, food consumption patterns, health, and diabetes, intergenerational transitions of food perceptions and food preferences, and infant and young children feeding practices.</span>

[Towards healthy pathways: Effect of nutrition labels on eating behaviours in a university canteen]

Abstract:Objective: To evaluate the effectiveness of including nutritional and food properties information in a university canteen in Salamanca (Spain) to promote healthy eating behaviours. Design: Experimental and correlational cross-sectional study. Location: University Dining Hall of Salamanca (Spain). Participants: In the experiment, information was collected on the choice of 1122 menus by university students. The questionnaire was answered by 48 university students who participated in the experiment. Main measurements: Mixed methodology (field experiment and online questionnaire). The independent variable was the inclusion or not of nutritional information from the menus. The questionnaire was used to evaluate the students' attitude towards this type of tool. Results: The experiment shows an improvement in the diet of university students with the inclusion of information elements that appeal to the healthiest choice, increasing their consumption of fruit, vegetables, legumes, fish and white meat. The students surveyed showed a high degree of receptivity to these health promotion tools. Despite this, their self-perception of dietary improvement was more optimistic than that quantified in the experiment. University students showed a very high degree of approval of other health promotion tools, especially those of an educational and informative nature. A greater concern for diet was associated with greater support for these tools. Conclusion: There is an improvement in the diet of university students and a positive attitude towards health promotion tools, especially by those with a healthier self-perception. There is a need for new tools based on behavioural sciences in health promotion by private industry and public entities.
Impact on Fecal Microbiota and Health-Related Markers of an Intervention Focused on Improving Eating Behavior in People at Risk of Food Insecurity

Abstract:Non-communicable diseases are particularly prevalent among low-income individuals and are associated with the consumption of processed foods, fat, and sugars. This work aims to evaluate the impacts of a nutrition education intervention for low socio-economic individuals on sensory perception, health-related parameters and gut microbiota. Twenty low-income adults underwent a 4-week intervention. Dietary information (three 24 h recalls), detection thresholds and discrimination scores (salty and sweet), and severity of depressive symptoms (Beck Depression Inventory-II (BDI-II)) were collected. Fecal microbial composition and short chain fatty acids were determined by 16S ribosomal RNA-gene sequencing and gas chromatography, respectively. After the intervention, 35% of subjects presented higher compliance with dietary recommendations, increased consumption of vegetables and lignans and reduced consumption of processed meats and nitrosamines, together with depleted levels of Actinomycetota. Higher discrimination for salty and sweet and lower BDI-II scores were also obtained. This nutrition education intervention entailed changes in dietary intake towards healthier food options, reduced potentially carcinogenic compounds and improved scores for discrimination and severity of depressive symptoms. The confirmation of these results in future studies would enable the design of strategic policies contributing to the optimal nutrition of materially deprived families through affordable healthy plant-based interventions.

Abstract:The food environment is a critical place in the food system to implement interventions to support sustainable diets and address the global syndemic of obesity, undernutrition, and climate change, because it contains the total scope of options within which consumers make decisions about which foods to acquire and consume. In this paper, we build on existing definitions of the food environment, and provide an expanded definition that includes the parameter of sustainability properties of foods and beverages, in order to integrate linkages between food environments and sustainable diets. We further provide a graphical representation of the food environment using a socio-ecological framework. Next, we provide a typology with descriptions of the different types of food environments that consumers have access to in low-, middle-, and high-income countries including wild, cultivated, and built food environments. We characterize the availability, affordability, convenience, promotion and quality (previously termed desirability), and sustainability properties of food and beverages for each food environment type. Lastly, we identify a methodological approach with potential objective and subjective tools and metrics for measuring the different properties of various types of food environments. The definition, framework, typology, and methodological toolbox presented here are intended to facilitate scholars and practitioners to identify entry points in the food environment for implementing and evaluating interventions that support sustainable diets for enhancing human and planetary health.

Reflections on ideas and disputes in the context of the promotion of healthy eating

Abstract:Actions in the promotion of healthy eating are strategic for reversing nutritional problems. This article analyzes the disputes over ideas in discursive repertoires on healthy eating in Brazil's national policies and international, government, civil society, and private commercial sector documents in the last 20 years. Based on the document analysis method in dialogue with the academic literature, the following perspectives on healthy eating were identified: traditional culturalist; medicalizing biological/nutritional; multidimensional; and systemic. The disputes are established between ideas in the following areas: the existence of "unhealthy foods"; the attributions, limits, and forms of State intervention; eating as an individual or public matter; and the meanings of sustainability, commensality, culture, and food. Policy positions on pesticides, food fortification, and supplementation are key elements in these disputes. In the policy sphere, the private commercial sector adopts strategies of fragmentation, downplaying, and distortion of meanings that reinforce polarization between individual actions (lifestyles, freedom of choice) and environmental interventions, thereby disseminating a narrow approach to food and nutrition education. Civil society pressures governments to establish concepts and principles in policies that directly affect the disputes' parameters. The latter act with greater or lesser permeability to pressures from internal or external stakeholders, depending on their composition and the institutional spaces for dialogue with society.

Abstract:There is growing recognition of the role of diet on modulating the composition and metabolic activity of the human gut microbiota, which in turn influence health. Dietary ingredients and food additives have a substantial impact on the gut microbiota and hence affect human health. Updates on current understanding of the gut microbiota in diseases and metabolic disorders are addressed in this review, providing insights into how this can be transferred from bench to bench side as gut microbes are integrated with food. The potency of microbiota-targeted biomarkers as a state-of-art tool for diagnosis of diseases was also discussed, and it would instruct individuals with healthy dietary consumption. Herein, recent advances in understanding the effect of diet on gut microbiota from an ecological perspective, and how these insights might promote health by guiding development of prebiotic and probiotic strategies and functional foods, were explored.

Abstract:Correct dietary patterns are important for a child’s health from birth to adulthood. Understanding a child’s health as a state of entire physical, mental, and social well-being is essential. However, reaching adulthood in a complete health proper state is determined by feeding and dietary habits during preconception, pregnancy, or children infancy. Different factors, such as the mother’s lifestyle, culture, or socioeconomic status, are crucial during all these phases. In this review, we aimed to assess the long-term associations between infancy dietary patterns and health and their influence on development and growth. To reach this objective, a consensus critical review was carried out using primary sources such as scientific articles, and secondary bibliographic indexes, databases, and web pages. PubMed, SciELO, and Google Scholar were the tools used to complete this research. We found that high-income countries promote high-calorie foods and, consequently, obesity problems among children are rising. However, undernutrition is a global health issue concerning children in low- and middle-income countries; thus, parental socioeconomic status in early life is essential to children’s health and development, showing that biological, social, and environmental influences are increased risk factors for chronic diseases. This narrative review is aimed to collect evidence for early nutritional intervention and future disease prevention.
