Abstract:Electrochemical biosensors based on diamine oxidase (DAO) conjugated to magnetic beads (MBs) were developed for the detection of histamine (Hist), putrescine (Put) and cadaverine (Cad), the most relevant biogenic amines (BAs) related to food safety and quality. DAO-MBs were immobilised on Co(II)-phthalocyanine/carbon and Prussian Blue/carbon electrodes to obtain mono-enzymatic biosensors, and on Os-wired HRP-modified carbon electrodes to obtain bi-enzymatic biosensors. The three sensor have low working potentials (+0.4 V, −0.1 V and −0.05 V vs Ag/AgCl, respectively), a linear range of two orders of magnitude (from 0.01 to 1 mM BA), good reproducibility (variability lower than 10 %), high repeatability (up to 8 consecutive measurements), limits of detection in the µM concentration range for Hist and in the sub-µM concentration range for Put and Cad, and no response from possible interfering compounds. The DAO-MB conjugates display excellent long-term stability (at least 3 months). The biosensor has been applied to the determination of BAs in spiked and naturally-spoiled fish, demonstrating its suitability both as screening tool and for BAs quantification. The use of MBs as supports for enzyme immobilisation is advantageous because the resulting biosensors are simple, fast, stable, affordable, and can be integrated into array platforms. This makes them suitable for high-throughput analysis of BAs in the food industry.Graphical AbstractMagnetic beads are used as diamine oxidase immobilisation supports for the development of amperometric biosensors for the detection of histamine, putrescine and cadaverine. Abstract:It is necessary to detect the biogenic amine (BA) content in food due to their toxicological effects and their role as an index of freshness for protein-rich foods. Aptamer-based techniques have the potential to provide alternative methods for sensitive and efficient monitoring of BAs. Herein, we described the selection and characterization of DNA aptamers for tyramine (TYR) and β-phenethylamine (PHE) using a one-pot coupled with separate selection strategy. During the selection process, melting curve analysis was developed to monitor the enrichment of the aptamer species, and a saturation of the selection was found at the 14th round. Based on the fluorescence assay, aptamers TYR-2 and PHE-2 showed high affinity to TYR and PHE with the dissociation constant values of 64.28 ± 10.4 and 71.64 ± 11.47 nM, respectively. The circular dichromatic and molecular docking technologies were employed for the preliminary binding mechanism analysis. The obtained aptamers TYR-2 and PHE-2 were used in a fluorescence method for the TYR and PHE determination with limits of detection of 0.34 and 0.39 ng/mL, respectively. In addition, the developed aptasensor was further applied to the TYR and PHE detection in pork and beer samples, and the recovery rate was between 95.6 and 104.2%. It was demonstrated that the selected aptamers had enormous potential as a molecular probe for the identification and determination of BAs.
Simultaneous determination of 13 biogenic amines and their metabolites in liquid fermented food by HPLC-QTRAP-MS without derivatization

Abstract:Biogenic amines and their metabolites (BAs) are among the most frequently detected compounds in liquid fermented foods, raising significant concerns about the potential risks they pose. To rapidly and selectively determine BAs, this study proposed and validated a method for the simultaneous determination of 13 BAs in liquid fermented foods using high performance liquid chromatography-triple quadrupole/linear ion trap mass spectrometry (HPLC-QTRAP-MS) without derivatization. The simultaneous separation and determination of histamine (HIS), tyramine (TYR), putrescine (PUT), octopamine (OCT), 2-phenylethylamine (2-PHE), dopamine (DOP), spermidine (SPD), epinephrine (EPI), agmatine (AGM), 5-hydroxytryptamine (5-HYD), tryptamine (TRY), L-noradrenaline (L-NOR), cadaverine (CAD) were achieved using a Waters Atlantis Premier BEH Z-HILIC (1.7 μm particle size, 100 mm × 2.1 mm id) column with a mobile phase consisting of water (containing 0.025 % formic acid) and acetonitrile (containing 0.1 % formic acid). The analysis of target compounds was performed with electrospray ionization (ESI) in positive ion mode, multiple reaction monitoring (MRM), information dependent acquisition (IDA), enhanced product ion (EPI), and multi-step mode analysis combined with EPI library searching. To enhance the extraction efficiency of BAs, factors such as extraction solvent, filter membranes, extraction methods, pH, oscillation speed, time and temperature were systematically investigated. The results demonstrated that the method exhibited low limits of detection (LOD) and quantification (LOQ), ranging from 0.05 to 2.00 μg/L and 0.16 to 6.60 μg/L, respectively. The method also showed satisfactory reproducibility, with intra-day and inter-day relative standard deviations ranging from 0.90 % to 3.80 % and 2.65 % to 8.27 %, respectively. Additionally, it had a broad linear range from 0.05 to 200.00 μg/L with excellent linearity (R>0.99) and an average recovery rate between 65.68 % and 115.14 %. Overall, the results demonstrated that the established method was convenient to operate, offered a short analysis time, and achieved high accuracy and sensitivity. It met the qualitative and quantitative requirements for detecting 13 BAs in liquid fermented food, thus providing strong technical support for BAs detection.

Abstract:Biogenic amines are quality control criteria for foods that are potentially toxic to humans. In this study, amidation derivatization for biogenic amines and liquid–solid phase transition microextraction were carried out simultaneously for food sample pretreatment. The derivatization reaction was executed in one pot with coumarin-3-carboxylic acid as the derivatizing reagent and (1-cyano-2-ethoxy-2-oxoethylidenaminooxy)dimethylamino-morpholino-carbenium hexafluorophosphate as the coupling agent. Liquid–solid phase transition microextraction was achieved by the salting-out effect, using a phase change salt (1 M disodium hydrogen phosphate) solution. The combined derivatization and microextraction process was completed within 3 min at 30 °C, and the liquid top phase was easily obtained by placing the tube in an ice bath. Finally, a narrowbore liquid chromatograph coupled with a UV detector was used to determine the levels of six biogenic amines. The coupling agent-assisted derivatization and liquid–solid phase transition microextraction parameters were also investigated. The quantitative linear ranges were 3–400 μM for histamine, putrescine, spermidine, cadaverine, and tyramine and 5–400 μM for spermine, and the detection limit was 1 μM. The relative standard deviations of the intra- and inter-batches were <5.3% and 8.4%, respectively, while the relative error was <4.5% for both. We successfully applied this simultaneous derivatization–microextraction method to determine the biogenic amines in fermented foods.

Abstract:Biogenic amines (BAs) were presented as significant markers for the evaluation of the spoilage of meat and meat products. In this work, a colorimetric sensor array was developed for the discrimination and detection of spermine (SP), spermidine (SD), histamine (HS), and tryptamine (TP) as important BAs in food assessment. For this aim, two important spherical plasmonic nanoparticles, namely gold nanoparticles (AuNPs) and silver nanoparticles (AgNPs), were utilized as the sensing elements of the probes. The cross-reactive interaction of the target biogenic amines and the plasmonic nanoparticles caused the aggregation-induced UV–Vis spectra changes, which were accompanied by visual color variation in the solution. The collected responses were analyzed by principal component analysis-linear discrimination analysis (PCA-LDA) to classify the four BAs. This colorimetric sensor array can also discriminate between the individual BAs and their mixture accurately. Partial least squares regression (PLS-R) was also utilized for quantitative analysis of the BAs. The wide linear concentration ranges of 0.1–10.0 μM for the four BAs and desirable figures of merits (FOMs) showed the potential of the developed sensor for quantitative detection of the BAs. Finally, the practical ability of the developed probe was studied by the determination of the BAs in the meat samples, which successfully proved the potential of the colorimetric sensor array in a food sample.

Providing Multicolor Plasmonic Patterns with Au@Ag Core-Shell Nanostructures for Visual Discrimination of Biogenic Amines.

Abstract:Biogenic amines (BAs) are known as substantial indicators of the quality and safety of food. Developing rapid and visual detection methods capable of simultaneously monitoring BAs is highly desired due to their harmful effects on human health. In the present study, we have designed a multicolor sensor array consisting of two types of gold nanostructures (i.e., gold nanorods (AuNRs) and gold nanospheres (AuNSs)) for the discrimination and determination of critical BAs (i.e., spermine (SM), tryptamine (TT), ethylenediamine (EA), tyramine (TR), spermidine (SD), and histamine (HT)). The design principle of the probe was based on the metallization of silver ions on the surface of AuNRs and AuNSs in the presence of BAs, forming Au@Ag core-shell nanoparticles. Changes in the surface composition, size, and aspect ratio of AuNSs and AuNRs induced a blue shift in the plasmonic band, which was accompanied by sharp and rainbowlike color variations in the solution. The collected data were visually assessed and statistically analyzed by various data visualization and pattern recognition methods. Namely, linear discriminant analysis (LDA) and partial least squares (PLS) regression were employed for the qualitative and quantitative determination of BAs. The responses were linearly correlated to the concentrations of BAs in a wide range of 10-800, 20-800, 40-800, 40-800, 60-800, and 80-800 μmol L-1 with the limit of detections of 2.46, 4.79, 8.58, 14.26, 10.03, and 27.29 μmol L-1 for SD, SM, TT, HT, EA, and TR, respectively. Finally, the practical applicability of the sensor array was investigated by the determination of BAs in meat and fish samples by which the potential of the probe for on-site determination of food freshness/spoilage was successfully verified.

Abstract:In this study, we developed a column-switching high-performance liquid chromatography method with fluorescence detection for the simultaneous analysis of biogenic amines (BAs). This method uses an isocratic solution using acetonitrile with water as the mobile phase. Column-switching is achieved by using a switching valve with a set time program to change flow direction. Using this method, seven BAs (tryptamine, 2-phenylethylamine, putrescine, cadaverine, histamine, tyramine, and spermidine) could be separated and impurities eliminated. Using fluorescence detection, BAs could be identified with high sensitivity. We employed this method to determine the BA contents of fish (mackerel, tuna, and cod) and fermented food (a soybean product and cheese). Our results are in line with previous reports, yielded highly reproducible and quantitative results, and enabled the quick and simultaneous analysis of multiple BAs. Therefore, the method developed here may be useful for the continuous analysis of BAs in different samples to evaluate food quality.

Abstract:Histamine (HIS) and tryptamine (TRY) are heterocyclic biogenic amines (BAs) often found in food products. The consumption of products containing high levels of BAs results in a wide range of life-threatening physiological reactions. The work described a Simultaneous coupled with Separate selection strategy for the screening of different aptamers against histamine and tryptamine. Aptamer HIS-3 and TRY-2 exhibited a good binding affinity; specificity and pH stability to histamine and tryptamine were obtained with a dissociation constant of 11.62 +/- 3.241 nM and 6.303 +/- 1.758 nM, respectively. The preliminary binding mechanism was analyzed using a circular dichromatic (CD) and molecular docking. Finally, the identified aptamers were used for the development of a colorimetric method for the detection of histamine and tryptamine, achieving limits of detection of 1 ng/mL and 10 ng/mL, respectively. This aptamer-based method was further successfully employed to detect the BAs in fish and pork, providing a potential application for sensitive and efficient detecting multiple food risk factors.
The Development of an Ultra-Performance Liquid Chromatography–Tandem Mass Spectrometry Method for Biogenic Amines in Fish Samples

Abstract:Biogenic amines (BAs) are a group of substances that are formed from amino acids by decarboxylation or amination and transamination of aldehydes and ketones. They may have either an aliphatic, aromatic, or heterocyclic structure. Their quantity determines their effects and optimum amounts are essential for physiological functions, but excess BAs causes various toxic effects throughout the human body. In our study, to rapidly determine 14 BAs (histamine, tyramine, dopamine, tryptamine, serotonin, putrescine, spermine, spermidine, octopamine, benzylamine, 1-Phenylethanamine, cadaverine, 2-Phenethylamine, and agmatine) in real fish samples, an ultra-performance liquid chromatography–tandem mass spectrometry method was established. The fish sample was extracted by acetonitrile with 0.1% formic acid and stable biogenic amine derivatives could be obtained by benzoyl chloride derivatization with a shorter reaction time. The method showed good linearity with a linear range of 3–4 orders of magnitude and regression coefficients ranging from 0.9961 to 0.9999. The calculated LODs ranged from 0.1 to 20 nM and the LOQs ranged from 0.3 to 60 nM. Satisfactory recovery was obtained from 84.6% to 119.3%. The proposed method was employed to determine the concentration levels of biogenic amine derivatives in different fish. The results indicated that this method was suitable for the analysis of biogenic amines.

Questionnaries for measuring fatigue and its impact on health perception in inflammatory bowel disease.

Abstract:INTRODUCTION fatigue impacts perceived health, but its importance in inflammatory bowel disease is not known. OBJECTIVES to define the applicability of the fatigue measurement questionnaires and analyze it in patients with Crohn´s disease and ulcerative colitis. MATERIAL AND METHODS in a first phase, the psychometric properties of 3 fatigue measurement questionnaires were determined in 99 patients: Daily Fatigue Impact Scale, Fatigue Severity Scale, and Modified Fatigue Impact Scale. In a second phase, fatigue status and its relationship to disease and quality of life was determined in 127 patients and 69 healthy controls. RESULTS the first part of the study showed the applicability of the questionnaires listed in inflammatory bowel disease, the Daily Fatigue Impact Scale (DFIS) having the best correlation with the quality of life and clinical activity. In the second phase, significantly higher levels of fatigue were observed in active disease than in disease in remission and healthy controls (p < 0,05). The severity of fatigue was significantly correlated with quality of life (r = -0.66 and -0.72 between IBDQ-9 and DFIS and in Crohn´s disease and ulcerative colitis, respectively) and with disease activity (r = 0.25 and Crohn´s disease and ulcerative colitis, respectively, p < 0.05). CONCLUSIONS in inflammatory bowel disease, fatigue measurement questionnaires have good properties and show that fatigue is an important manifestation of the disease, which has a significant impact on quality of life of patients.
Colorimetric detection of food freshness based on amine-responsive dopamine polymerization on gold nanoparticles

Abstract:Biogenic amines (BAs) are not only well-known indicators for food freshness but can cause serious harm to the body after excessive consumption, which makes the determination of its content in food of great significance. In this work, a simple and convenient method for colorimetric detection of BAs was developed based on the sensitivity of the polymerization of dopamine to the presence of BAs on the surface of gold nanoparticles (AuNPs). Taking histamine as a representative, the system exhibited a distinct color change from wine red to black among the amine concentration of 1–100 μg/mL with the detection limit of 2.8 μg/mL. The detection system also exhibited sensitivity to other common kinds of BAs, such as putrescine, cadaverine, spermine, spermidine, tyramine, and tryptamine. Moreover, the proposed method showed encouraging performance in visual detection of the freshness of real samples, which provided a new approach for food quality and freshness evaluation.

A Dual-Donor FRET Based Aptamer Sensor for Simultaneous Determination of Histamine and Tyramine in Fishes

Abstract:The presence of biogenic amines (BAs) in food is not only important from a toxicological view, but can also be used as an indicator of food spoilage. However, the design of biosensors for the detection of BAs is very limited. Hence, in this work, a dual-donor fluorescence resonance energy transfer (FRET) aptasensor was established for simultaneous determination of histamine (HIS) and tyramine (TYR) using dual-color quantum dots (QDs) as energy donors and two-dimensional molybdenum sulfide nanosheets (MoS2 NSs) as energy acceptor. Specific aptamer for HIS (Apt 1) and TYR (Apt 2) were labeled with two fluorescence emission QDs (QD530 and QD625), respectively. On the basis of the excellent adsorption ability of MoS2 NSs toward aptamer, the fluorescence quenching can be observed between MoS2 NSs and QD530-Apt1 and QD625-Apt2. Upon the addition of HIS and TYR, the aptamer conformation switches induced by the target binding mitigate the interaction force of MoS2 NSs and QD530-Apt1 and QD625-Apt2, resulting in the fluorescence recovery. The method displays good sensitivity with limit of detection (LOD) of 0.1 ng/mL for HIS and 0.25 ng/mL for TYR, respectively. It can also be applied to the HIS and TYR detection in spiked fish samples with recovery of 95.2%similar to 106.6%, demonstrating its prospect in the sensitive detection of BAs in animal-derived foodstuff.
Laser Scribed Graphene Biosensor for Detection of Biogenic Amines in Food Samples Using Locally Sourced Materials

Abstract:In foods, high levels of biogenic amines (BA) are the result of microbial metabolism that could be affected by temperatures and storage conditions. Thus, the level of BA is commonly used as an indicator of food safety and quality. This manuscript outlines the development of laser scribed graphene electrodes, with locally sourced materials, for reagent-free food safety biosensing. To fabricate the biosensors, the graphene surface was functionalized with copper microparticles and diamine oxidase, purchased from a local supermarket; and then compared to biosensors fabricated with analytical grade materials. The amperometric biosensor exhibits good electrochemical performance, with an average histamine sensitivity of 23.3 µA/mM, a lower detection limit of 11.6 µM, and a response time of 7.3 s, showing similar performance to biosensors constructed from analytical grade materials. We demonstrated the application of the biosensor by testing total BA concentration in fish paste samples subjected to fermentation with lactic acid bacteria. Biogenic amines concentrations prior to lactic acid fermentation were below the detection limit of the biosensor, while concentration after fermentation was 19.24 ± 8.21 mg histamine/kg, confirming that the sensor was selective in a complex food matrix. The low-cost, rapid, and accurate device is a promising tool for biogenic amine estimation in food samples, particularly in situations where standard laboratory techniques are unavailable, or are cost prohibitive. This biosensor can be used for screening food samples, potentially limiting food waste, while reducing chances of foodborne outbreaks.
Development of an Immunoassay Method for the Sensitive Detection of Histamine and Tryptamine in Foods Based on a CuO@Au Nanoenzyme Label and Molecularly Imprinted Biomimetic Antibody

Abstract:In this paper, a novel biomimetic enzyme-linked immunoassay method (BELISA) was successfully established for the detection of histamine and tryptamine, based on catalytically active cupric oxide@gold nanoparticles (CuO@Au NPs) as a marker and a molecularly imprinted polymer (MIP) as the biomimetic antibody. Under optimized conditions, the detection limitations of the BELISA method for histamine and tryptamine were 0.04 mg L−1 and 0.14 mg L−1, respectively. For liquor spiked with histamine and tryptamine, the BELISA method delivered satisfactory recoveries ranging from 89.90% to 115.00%. Furthermore, the levels of histamine and tryptamine in fish, soy sauce, and rice vinegar samples were detected by the BELISA method and a high performance liquid chromatography method, with no significant difference between the two methods being found. Although the catalytic activity of nanozymes is still lower than that of natural enzymes, the BELISA method could still sensitively determine the histamine and tryptamine levels in food samples.

Abstract:This article provides an overview on the broad topic of biogenic amines (BAs) that are a persistent concern in the context of food quality and safety. They emerge mainly from the decomposition of amino acids in protein-rich food due to enzymes excreted by pathogenic bacteria that infect food under inappropriate storage conditions. While there are food authority regulations on the maximum allowed amounts of, e.g., histamine in fish, sensitive individuals can still suffer from medical conditions triggered by biogenic amines, and mass outbreaks of scombroid poisoning are reported regularly. We review first the classical techniques used for selective BA detection and quantification in analytical laboratories and focus then on sensor-based solutions aiming at on-site BA detection throughout the food chain. There are receptor-free chemosensors for BA detection and a vastly growing range of bio- and biomimetic sensors that employ receptors to enable selective molecular recognition. Regarding the receptors, we address enzymes, antibodies, molecularly imprinted polymers (MIPs), and aptamers as the most recent class of BA receptors. Furthermore, we address the underlying transducer technologies, including optical, electrochemical, mass-sensitive, and thermal-based sensing principles. The review concludes with an assessment on the persistent limitations of BA sensors, a technological forecast, and thoughts on short-term solutions.
Liquid Chromatographic Determination of Biogenic Amines in Fish Based on Pyrene Sulfonyl Chloride Pre-Column Derivatization

Abstract:Monitoring of biogenic amines in food is important for quality control, in terms of freshness evaluation and even more for food safety. A novel and cost-effective method was developed and validated for the determination of the main biogenic amines: histamine, putrescine, cadaverine, spermidine and spermine in fish tissues. The method includes extraction of amines with perchloric acid, pre-column derivatization with Pyrene Sulfonyl Chloride (PSCl), extraction of derivatives with toluene, back-dissolution in ACN after evaporation and determination by reversed phase high performance liquid chromatography with UV and intramolecular excimer fluorescence detection. The structure of the pyrene-derivatives was confirmed by liquid chromatography–mass spectrometry with electrospray ionization. The standard addition technique was applied for the quantitation due to significant matrix effect, while the use of 1,7-diaminoheptane as internal standard offered an additional confirmation tool for the identification of the analytes. Method repeatability expressed as %RSD ranged between 7.4–14% for the different amines and recovery ranged from 67% for histamine up to 114% for spermine. The limits of detection ranged between 0.1–1.4 mg kg−1 and the limits of quantification between 0.3–4.2 mg kg−1. The method was applied to canned fish samples and the concentrations of the individual biogenic amines were below the detection limit up to 40.1 mg kg−1, while their sum was within the range 4.1–49.6 mg kg−1.

Abstract:The development of colorimetric sensor array for the detection of natural amino acids is reported. Using a cross-responsive array containing a diverse family of chemically responsive dyes, the colorimetric sensor array provides enormous discriminatory power among different analytes. Digital imaging of the dye array before and after immersion provides a color change profile as a unique fingerprint for each specific analyte. The 6×6 array used in this research has 36 dyes that were sensitive to amino acids. A functional portable type apparatus was developed for data acquisition and data processing. Using colorimetric sensor arrays, 10 natural amino acids have been analyzed within 5 min of exposure at concentrations of 375 μM. The digital data library generated was analyzed with statistical and chemometric methods, including principal component analysis (PCA) and linear discriminant analysis (LDA). Facile identification of all the amino acids was readily achieved using comparison of the color change profiles or a PCA score plot. Using LDA analysis, the classification accuracy of identification was 97%. These results suggest that colorimetric sensor arrays may prove to be useful for the identification of natural amino acids, and they also represent a potential application in the field of cell recognition, food quality assurance, and microbial identification.

Abstract:As a kind of organic basic compound containing nitrogen, biogenic amine is released from food spoilage and considered as an indicator for monitoring food freshness. Herein, an excellent dual-emission ratiometric fluorescent sensor for eight kinds of biogenic amines was established by facile mixing pH-responsive carbon dots and Rhodamine B. The developed sensor showed rapid response (10 s), low limits of detection (0.733–3.943 μM) and wide linear ranges (0–150 μM). More important, a portable fluorescent filter paper was prepared by simple dispersing the filter paper in the mixture solution of carbon dots and Rhodamine B. The obtained fluorescent filter paper based sensor showed an obvious color change in the presence of biogenic amine vapor derived from shrimp and mushroom. The results revealed that this sensor could realize on-site and visual detection of biogenic amines in real food samples, possessing potential application in the food safety monitoring.

Abstract:We have developed an upconversion nanoparticles (UCNPs) based fluorescence immunoassay for simultaneously detecting tyramine and histamine in foods. The anti-tyramine and anti-histamine antibody were linked to NaYF4Yb, Tm (emission at 483 nm) and NaYF4Yb, Er (emission at 550 nm) UCNPs as multicolor signal probe, respectively. The tyramine and histamine coating antigen were connected to magnetic microspheres as capture probe, respectively. Base on a competitive format, capture probes compete with analytes to combine corresponding signal probes. Under excitation at 980 nm, the formed competitive immune-complex fluorescent signal at 483 and 550 nm indicates concentration of tyramine and histamine, respectively. This immunoassay has detection linear from 0.5 to 100 μg L-1 with limit of detection (LOD) of 0.1 μg L-1 for tyramine, and 0.1 to 100 μg L-1 with LOD of 0.01 μg L-1 for histamine, respectively. This multiplexed analysis format has potential applications for rapid, efficient detecting multiple food risk factors.

Abstract:As one of Maillard's hazards, acrylamide (AAm) can induce neurotoxicity, mutagenicity, and genotoxicity, and it's urgent to construct a detection method for sensitive and specific monitoring of AAm. Herein, an aptamer-gated colorimetric sensor was developed to detect AAm in food. UiO-66-NH 2 was selected to combine acetylcholinesterase (AChE) and the aptamer of AAm to construct the aptamer-gated probe UAzyme-Apt. The addition of AAm would detach Apt and expose the active sites of UAzyme, resulting in the transformation of acetylthiocholine (ATCh) into thiocholine (TCh) that could inhibit the oxidase mimic activity of MIL-53 (Fe/Mn). Consequently, the concentration of AAm was inversely proportional to the absorbance at 652 nm, thus providing a qualitative and quantitative detection of AAm. The aptamer-gated probe can recognize AAm to improve specificity and stability and regulate the enzyme activity of UAzyme. This aptasensor enhances the detection methods of AAm and broadens the scope of applications for AChE inhibition detection, and targets are not limited to the substrate or organophosphorus pesticides. The linear range and limit of detection were 0.05–100 μM (R 2 = 0.992) and 9.94 nM, and spiked analysis revealed the efficiency and robustness of the developed assembly. The colorimetric aptasensor can specifically detect AAm at low concentrations, and will be a promising tool to ensure food safety in the coming future.
