Abstract:Abstract. Rice bran is a by-product of rice processing. Studies have shown that rice bran gives health benefits including control of obesity, diabetes, gastrointestinal disorders and cardiovascular diseases. Compositional analysis reveals that rice bran consists of 20%-30% dietary fiber and has been reported to have positive effects on the ability of lipid metabolism. In this study, extrusion-assisted enzymatic hydrolysis extraction process （ EEHEP ） was applied to rice bran dietary fiber to change its structure and particles size which will affect its physicochemical properties. The aim of this study was to investigate the effects of EEHEP on extraction rate and physicochemical properties of dietary fiber. The results indicated that EEHEP compared to other treatment methods has positively and greatly influenced the extraction rate and physicochemical properties of rice bran dietary fibers. The orthogonal test has been adopted to analyze the optimum process conditions: extrusion temperature of 130℃, material moisture content of 20%, screw speed 200r/min, the die head aperture of 6. Based on these conditions: enzymatic hydrolysis temperature of 75℃, enzymatic dosage of 2.0%, hydrolysis time of 90min, pH of 6.0, the extraction rate was 30.35%.
Extrusion-Assisted Extraction Process of Rice Bran Soluble Dietary Fiber and Its Properties

Abstract:In this paper,the process of extrusion-assisted enzymatic hydrolysis to extract the soluble dietary fiber was optimized based on single factor and orthogonal experiments,with fresh rice bran as the material.In addition,the effect of different extruding processes and enzyme conditions on the soluble dietary fiber content was analyzed.At the same time,the physicochemical properties of soluble dietary fiber were presented by scanning electron microscope (SEM) and differential scanning calorimeter (DSC).The results showed that soluble dietary fiber had high productivity of 30.35％ under the condition of extrusion temperature of 130 ℃,the screw speed of 200 r/min,material water content of 20％,enzyme dosage of 2.0％,enzymatic hydrolysis temperature of 75 ℃,hydrolysis time of 90 min,pH of 6.0.The surface morphology of rice bran soluble dietary fiber was loose and honeycomb.Inter body was composed of cellulose material,which made a relatively stable thermodynamics of soluble dietary fiber.Compared with the un-extrusion processing,the soluble dietary fiber extracted by the extrusion-assisted had higher retention ability,water binding ability,swelling ability,bound fat ability,and the structure characterization and physiological functional properties were improved.
Extraction Optimization, Antidiabetic and Antiglycation Potentials of Aqueous Glycerol Extract from Rice (oryza Sativa L.) Bran

Abstract:The purpose of this investigation was to explore aqueous glycerol as food grade solvent for rice bran poly-phenolic antioxidants extraction and investigate the antidiabetic and antiglycation potential of the extract and its major polyphenols. Response surface methodology (Box-Behnken design) was implemented to optimize experimental conditions for rice bran polyphenols and antioxidants extraction. The optimum conditions provided a very satisfactory outcome in total polyphenols (549.6 +/- 8.05 mg gallic acid equivalent per 100 g dry weight) and DPPH scavenging activity (57.83 +/- 1.8%). The chromatographic separation of the extract showed higher concentrations of ferulic acid, rho-coumaric acid and chiorogenic acid followed by caffeic acid, syringic acid and rutin. Moreover, the extract inhibited alpha-amylase, alpha-glucosidase, and lipase activity as 34.2 +/- 3.2%, 29.9 +/- 1.0%, and 12.4 +/- 2.3%, respectively. Furthermore, fructose readily forms Advanced Glycation End Products (AGEs) fluorescence with basic amino acids in low concentration in simulated intestinal digestion conditions. The extract inhibited AGEs formation by 52.6% at 20 mu L/mL. Our study indicated that the anti-diabetic and antiglycation potential of rice bran extract was mainly driven by the extract polyphenols. Rice bran glycerol extract could be employed as a natural antidiabetic and antiglycation remedy, and as economically and eco-friendly source of potent bioactive compounds with satisfactory outcome.
Physicochemical Properties and Hypolipidemic Activity of Dietary Fiber from Rice Bran Meal Obtained by Three Oil-Production Methods

Abstract:This study investigated the effects of three oil production methods on the physicochemical properties of dietary fiber from rice bran flour, and the hypolipidemic effects of the dietary fibers were investigated in vitro and in vivo. The particle size results showed that the organic-solvent-impregnated rice bran meal dietary fiber (N-RBDF) had the smallest average particle size and the aqueous enzymatic rice bran meal dietary fiber (E-RBDF) had the narrowest particle size distribution. Scanning electron microscopy (SEM) results demonstrated that all three kinds of rice bran meal dietary fibers (RBDFs) were irregularly flaky. Fourier transform infrared spectroscopy (FT-IR) results revealed that the three RBDFs had similar reactive groups, and X-ray diffraction (XRD) results indicated that all three RBDFs were cellulose type I crystals. The results of thermogravimetric analysis showed that the lignin content of N-RBDF was significantly lower than that of the other two. Among the three kinds of RBDFs, E-RBDF had higher water retention capacity, swelling capacity, oil holding capacity, and adsorption capacity for cholesterol and sodium bile salts. The results of experimental studies in hyperlipidemic rats showed that all three kinds of RBDFs significantly reduced triglycerides (TG), total cholesterol (TC), and low-density lipoprotein cholesterol (LDL-C) and elevated high-density lipoprotein cholesterol (HDL-C) in the serum of hyperlipidemic rats; they also significantly lowered malondialdehyde (MDA) and elevated total superoxide dismutase (T-SOD) and glutathione peroxidase (GSH-Px) activities in the livers of rats. In addition, all three kinds of RBDFs decreased aminotransferase (ALT) and aminotransferase (AST) activity in serum and also improved liver steatosis and reduced atherosclerosis index (AI) in rats with hyperlipidemia. Our study provides a reference for the development and utilization of rice bran meal and the application of rice bran meal dietary fiber in food processing.

Abstract:Rice bran is a "treasure house of natural nutrition". Even so, utilization of rice bran is often ignored, and this has resulted in the wastage of nutrients. Polysaccharides are one of the active substances in rice bran that have gained widespread attention for their antioxidant, antitumor, immune-enhancing, antibacterial, and hypoglycemic properties. This review summarizes the extraction methods, structural characterization, bioactivity, and application of rice bran polysaccharides that have been developed and studied in recent years, laying a foundation for its development into foods and medicines. In addition, we also discuss the prospects for future research on rice bran polysaccharides.

Abstract:Rice bran is a kind of agricultural by-product, which is rich in renewable organic carbon sources and mainly used in feed and fertilizer production today. It has been reported that rice bran is rich in various active ingredients such as dietary fiber, polyphenols and polysaccharides, which have significant physiological activities such as anti-oxidation, lowering blood lipid and blood sugar. This paper starts with the bioactive components of rice bran, analyzes its the functional properties of rice bran and its active components in anti-oxidation, hypoglycemia, anti-obesity, hypolipidemic, immunomodulating, antitumor, etc, in order to improve the application value of the bioactive components of rice bran and provide theoretical basis for the effective utilization and industrialization of the following agricultural by-products.

Abstract:Rice bran oil is recommended by the World Health Organization as one of the three major healthy edible oils (along with corn and sesame oils), owing to its unique fatty acid composition and functional components. This study screened, organized, and analyzed a large number of studies retrieved through keyword searches, and investigated the nutritional value and safety of rice bran oil. It reviews the stability of raw rice bran materials and the extraction and refining process of rice bran oil and discusses food applications and sub-health regulations. Research has found that a delayed stabilization treatment of rice bran seriously affects the overall quality of rice bran oil. Compared with traditional solvent extraction, the new extraction technologies have improved the yield and nutritional value of rice bran oil, but most of them are still in the research stage. Owing to the lack of economical and applicable supporting production equipment, extraction is difficult to industrialize, which is a challenging research area for the future. Rice bran oil has stronger antioxidant stability than other edible oils and is more beneficial to human health; however, its application scope and consumption are limited owing to the product price and lack of understanding. Rice bran oil has significant antioxidant, anti-inflammatory, anti-cancer, hypoglycemic, lipid-lowering, and neuroprotective effects. Further exploratory research on other unknown functions is required to lay a scientific basis for the application and development of rice bran oil.
Extrusion-assisted Extraction of Insoluble Dietary Fiber from Rice Bran and Its Physical Properties

Abstract:In this paper, we investigated the effects of extrusion-assisted extraction on extraction rate and physical characteristics of insoluble dietary fiber (IDF) from rice bran were studied. Based on the single factor experiment, the orthogonal test was applied to optimize the parameters for insoluble dietary fiber from rice bran of extrusion-assisted extraction. The results showed that the highest extraction rate of 56.21% was reached under the conditions which the extrusion temperature was 135ÂºC, material moisture content was 20%, screw speed was 220r/min, extraction temperature was 50ÂºC, extraction time was 60min, feed liquid ratio was 1:55 and alkali concentration was 0.25mol/L. In addition, extrusion-assisted extraction not only increased the extraction rate of insoluble dietary fiber, but also improved physical properties. The insoluble dietary fiber obtained by extrusion-assisted extraction had higher water-holding capacity, water-binding capacity, extension capacity and fat-binding capacity, and much abundant reticular structure than those obtained by enzyme-assisted extraction and acid dissolution and alkali precipitation. It can be concluded that insoluble dietary fiber treated by extrusion-assisted extraction has the higher potential to be applied as a functional ingredient in food products.
Fractionation of the rice bran layer and quantification of vitamin E, oryzanol, protein, and rice bran saccharide

Abstract:Value-added processing with respect to rice milling has traditionally treated the rice bran layer as a homogenous material that contains significant concentrations of high-value components of interest for pharmaceutical and nutraceutical applications. Investigators have shown that high-value components in the rice bran layer vary from differences in kernel-thickness, bran fraction, rice variety, and environmental conditions during the growing season. The objectives of this study were to quantify the amount of rice bran removed at pre-selected milling times and to correlate the amount of rice bran removed at each milling time with the concentration of vitamin E, gamma-oryzanol, rice bran saccharide, and protein obtained. The ultimate goal of this research is to show that rice bran fractionation is a useful method to obtain targeted, nutrient-rich bran samples for value-added processing. Two long grain rice cultivars, Cheniere and Cypress, were milled at discrete times between 3 and 40 seconds using a McGill mill to obtain bran samples for analysis. Results showed that the highest oryzanol and protein concentrations were found in the outer portion of the rice bran layer, while the highest rice bran saccharide concentration was found in the inner portion of the bran layer. Vitamin E concentration showed no significant difference across the bran layer within a variety, though the highest magnitude of concentration occurs within the first 10 seconds of milling for both varieties. To extract the higher concentration of oryzanol and protein only the outer portion of the bran layer requires processing, while to extract the higher concentration of rice bran saccharide, only the inner portion of the bran layer requires processing. Rice bran fractionation allows for the selective use of portions of the bran layer and is advantageous for two reasons: (1) bran fractions contain higher concentrations of components of interest with respect to the overall bran layer average, and (2) less bran needs to be processed to obtain components of interest.

Abstract:Globally, 50% of people consume rice (Oryza sativa), which is among the most abundant and extensively ingested cereal grains. Rice bran is a by-product of the cereal industry and is also considered a beneficial waste product of the rice processing industry. Rice bran oil (RBO) is created from rice bran (20–25 wt% in rice bran), which is the outermost layer of the rice kernel; has a lipid content of up to 25%; and is a considerable source of a plethora of bioactive components. The main components of RBO include high levels of fiber and phytochemicals, including vitamins, oryzanols, fatty acids, and phenolic compounds, which are beneficial to human health and well-being. This article summarizes the stabilization and extraction processes of rice bran oil from rice bran using different techniques (including solvent extraction, microwaving, ohmic heating, supercritical fluid extraction, and ultrasonication). Some studies have elaborated the various biological activities linked with RBO, such as antioxidant, anti-platelet, analgesic, anti-inflammatory, anti-thrombotic, anti-mutagenic, aphrodisiac, anti-depressant, anti-emetic, fibrinolytic, and cytotoxic activities. Due to the broad spectrum of biological activities and economic benefits of RBO, the current review article focuses on the extraction process of RBO, its bioactive components, and the potential health benefits of RBO. Furthermore, the limitations of existing studies are highlighted, and suggestions are provided for future applications of RBO as a functional food ingredient.

Studies on the Function and Physiochemical Properties of Rice Bran Dietary Fiber

Abstract:The functions and physiochemical properties of rice bran dietary fiber and soybean dietary fiber were studied to promote the comprehensive utilization of rice bran dietary fiber. The oil holding capacity increased with temperature, being 4.0% and 8.2% higher at 50 ℃ than that at 37 ℃ and 20 ℃, respectively. The cation exchange capacity was 0.48 mmol / g. pH had effect on the adsorption of nitrite ion and cholesterol. The nitrite ion adsorption was 4.06 μmol / L and the cholesterol adsorption was 5.67 mg / g at pH 2. Soybean dietary fiber was better than rice bran dietary fiber in water holding capacity, oil holding capacity, expansive force and cation exchange capacity, but showed low adsorption capacity of nitrite and cholesterol.
A sequential approach of alkali enzymatic extraction of dietary fiber from rice bran: Effects on structural, thermal, crystalline properties, and food application

Abstract:Rice bran is abundant in dietary fiber and is often referred to as the seventh nutrient, recognized for its numerous health benefits. The objective of the current study is to investigate the extraction of both soluble and insoluble dietary fiber from defatted rice bran (DRB) using an alkali-enzymatic treatment through response surface methodology. The independent variables like substrate percentage (5-30 %), enzyme concentration (1-50 µL/g), and treatment time (2-12 h) and dependent variables were the yield of soluble and insoluble DF. The highest extraction yield was observed with alkali enzyme concentration (50 µL/g) treatment, resulting in 2 % SDF and 59.5 % IDF at 24 h of extraction. The results indicate that cellulase-AC enzyme aids in the hydrolysis of higher polysaccharides, leading to structural alterations in DRB and an increase in DF yield. Furthermore, the disruption of intra-molecular hydrogen bonding between oligosaccharides and the starch matrix helps to increase in DF yield, was also confirmed through FTIR and SEM. The extracted DF soluble and insoluble was then used to develop rice porridge. Sensory evaluation using fuzzy logic analysis reported the highest scores for samples containing 0.5 % insoluble DF and 1.25 % soluble DF.

Abstract:In order to optimize the extrusion technology of rice bran,the effects of rice bran granule size,water content and extrusion temperature on the yield of soluble dietary fiber from rice bran were explored by response surface methodology on the basis of single factor experiments. The optimal extrusion conditions were determined to be:rice bran granular size,0.175 mm; water content,33%; and extrusion temperature 164 ℃. The yield of soluble dietary fiber from rice bran was 19.23% under these extrusion conditions,which was close to the theoretical value. The importance of the above three process conditions affecting the extraction rate of soluble dietary fiber from strong to weak was in an order of water content,extrusion temperature and rice bran size. The extruded rice bran exhibited a significant improvement in expansion power,water-holding capacity,water-binding capability and oil-absorbing capacity. Comprehensive material property value of extruded rice bran exhibited a 2.12-fold improvement. Therefore,the extrusion technology can greatly improve the content of soluble dietary fiber in rice bran and comprehensive material properties,which will provide theoretical references for the utilization of rice bran in food industry.
