Abstract:The discrimination of liquors plays a vital role in our daily life as a large amount of cheap alcoholic beverages and low-quality counterfeits greatly damage the health of consumers. Array-based optical sensors have been developed as a fast and effective tool to discriminate multi-analytes or complex mixtures with similar structures, such as acids, esters, aldehydes and ketones. Over the past decades, optical sensor arrays have demonstrated remarkable capabilities in fast and accurate detection of diverse types, qualities, and authentic liquors. The identification strategy mainly focuses on the specific/non-specific interactions of flavor compounds in liquors with sensor elements. The cross-reactive optical signal readouts from the combination of sensor elements with liquors and multiple machine learning algorithms are essential to ensure the discriminatory capability of sensing system. In this review, we discuss the advantages and recent advances in pattern recognition of liquors in terms of the design of various types of sensing materials and the construction strategies of sensor arrays.

Abstract:The rapid and effective discrimination of Chinese white spirits is of great significance for quality control in the white spirit industry. Herein, we proposed a colorimetric sensor for white spirits based on silver deposition on gold nanorods (AuNRs), which were formed by reducing silver ions to Ag nanoshells on the surface of the AuNRs by different reductants containing hydroxyl or amino groups. The degree of inhibition of silver deposition was demonstrated to be strongly associated with the various components of white spirits, such as organic acids, aldehydes, ketones, and esters, which resulted in color differences and a consequent colorimetric response for different types of white spirits. The color differences could be recognized using principal component analysis (PCA), hierarchical cluster analysis (HCA), and linear discriminant analysis (LDA). The colorimetric sensor array was constructed by designing AuNRs with four different morphologies by utilizing different reducing agents to not only successfully distinguish various types of white spirits, including twelve types of strong-aroma-type spirits with similar flavor characteristics and different aroma-type spirits, but also to determine the concentration of the main ingredients affecting the quality of white spirits with a satisfactory linear range. Notably, the discriminating ability of the colorimetric sensor arrays was equal or superior than that of the untargeted metabolomic approach based on liquid chromatography-mass spectrometry. This sensing strategy, with facile preparation, fast response, excellent discrimination and high-throughput signal output, provides a promising application platform for real-time quality monitoring of white spirits and other alcoholic beverages.

Abstract:A novel chemical image sensor developed for liquid component analysis is proposed in this paper; using it, pH values ranging from I to 12 and six kinds of metal ion, namely Cu2+, Fe2+, Fe3+, Ca2+, Zn2+, and Mg2+, can be detected qualitatively and quantitatively. The sensor applies the principles of optical chemistry and microfabrication technology to detect the ion concentrations in the solution, and has the advantages of high sensitivity, reduced contamination, a lower sample volume required, and the capability of detecting several indices at one time. Moreover, three multivariate data analysis methods are suggested in the paper for treating the raw data acquired from the microbeads, and predicting the results. The study demonstrates that the principal component analysis is capable of classifying six kinds of cation with success. Both partial least-squares regression (PLS) and artificial neural networks (ANN) can be used to compute the pH values quantitatively; furthermore, the PLS method has the advantage of requiring fewer iteration steps than the ANN approach.

Abstract:Baijiu is a distilled liquor of great importance in the food industry. Various aroma types, brands, and grades of Baijiu have filled the market; thus, discrimination for quality control is required. Herein, we constructed a novel colorimetric sensor array based on the redox reaction between silver nitrate and o-phenylenediamine or its derivatives for the discrimination of carbonyl flavor compounds (CFCs) and Baijius. The specific colored products were changed by CFCs depending on the influence of silver nanoparticle aggregation and chemical reactions. The array was used to qualitatively and quantitatively identify 21 CFCs with fast response (<14 min), wide linear range (0.025-25 mmol/L), and low detection limits (<60 μmol/L, 29 nmol/L for carboxylic acids). Finally, the array was successfully applied to the discrimination of 56 Baijius. The method proposed in this study is simple, fast, reliable, and has good application potential for the visual determination of Chinese Baijiu.

Abstract:Gas mixtures are comprised of numerous complex components, making the accurate identification a continuing challenge due to the significant limitations of existing detection methods. Herein, we developed a low-cost and sensitive pattern-based colorimetric sensor array chip for the identification of typical gas mixtures - Baijiu aroma. Specifically, three nanomaterials (AuNPs, MoS2 and ZIF-8) were prepared to adsorb gas molecules and enhance the reaction of trace gases with sensor arrays. The colorimetric sensor array chip took only 5 min to complete the recognition of Baijiu aromas and effectively avoided recognition errors caused by sommelier olfactory fatigue. Notably, the hierarchical cluster analysis (HCA) revealed no confusion or errors in the results of 80 tests across the five trials involving 16 commercial Baijius. Even fake Baijius with similar ingredients could be easily identified, demonstrating the excellent analytical capabilities of the system in Baijiu identification and its significant potential for quality control of Baijius.

Abstract:Process analysis of basic liquors of Baijiu is a great challenge in industry due to the complexity fermentation processes and tiny product differentiation of basic liquors. In this work, a new triple channel colorimetric paper sensor array based on quantum dots (QDs) with three color-emission was established for the rapid process monitoring of basic liquors of Baijiu. The fluorescence of QDs can be quenched to varying degrees by the ingredients in basic liquors with different production processes, batches and qualities. Through analyzing color change (RGB value) of QDs under the UV lamp, all the corresponding information that represents basic liquors of Baijiu was extracted and further processed by principal component analysis and partial least squares discriminant analysis. By utilizing this colorimetric paper sensor array, all the production processes, batches and qualities of basic liquors can be monitored quickly and accurately with a recognition rate of 100%. What's more, this paper sensor array required neither special modification nor complex sample preparation and can implement rapid and precise visualization analysis by the naked eye with the aid of a portable UV lamp using only a simple device and small amount of sample, showing its potential applications in the food industry.

Abstract:The flavor of baijiu, a type of distilled spirit, mainly depends on the presence of certain flavor compounds. In this study, we focus on the four most important groups of flavor compounds in baijiu, viz. aldehydes, ketones, esters, and acids. Simple organic reactions, including the hydroxylamine color reaction, 2,4-dinitrophenylhydrazine (DNPH) nucleophilic addition reaction, and localized surface plasmon resonance (LSPR), exhibited by noble metal nanoparticles were used to construct an eight-channel visual array sensor, which can be used to directly and qualitatively detect the four major groups of flavor compounds in consideration. Using the optimized variable-weighted least-squares support vector machine, based on the particle swarm optimization (PSO-OVWLS-SVM) model, the sensor array allowed good quantification. The results of this study were supported by principal component analysis (PCA) and hierarchical cluster analysis (HCA) techniques. The results suggested that the sensor array can be used for the rapid detection of flavor compounds in actual baijiu samples.

Abstract:In this study, a novel colorimetric sensor array based on chemo dyes including porphyrins and pH indicators were developed to analyse the volatile organic compounds of Chinese Baijiu with different grades. Ethyl acetate, ethyl butyrate and ethyl caproate appeared by significantly different concentration in different Baijiu grades measuring by gas chromatography and mass spectrometry and they were chosen as characteristic volatile organic components. The olfactory visualization system based on colorimetric sensor arrays was used to identify different Baijiu grades. The data were processed by building the principle components analysis, linear discriminant analysis and K-nearest neighbor classification models with the results of sensory evaluation and olfactory visualization system. This work presents a new-style colorimetric sensor using sensitive chemo dyes which has significant potential in quantitative analysis of volatile organic compounds, afterwards identifying different grades of Baijiu.

Abstract:The discrimination and determination of small organics may be employed for baijiu identification. A single nanoparticle was designed as a fluorescence sensor to address this issue. Via specific host-guest interactions, small organics may significantly disrupt the energy transmission of nanoparticles, resulting in sharp changes in characteristic fluorescence peaks, thus allowing the discrimination of single substances or mixtures by principal component analysis (PCA), hierarchical clustering analysis (HCA), and linear discriminant analysis (LDA). The system was characterized by transmission electron microscopy with energy dispersive spectrometry and fluorescence spectroscopy. 15 small flavor organics in baijiu were successfully discriminated. Moreover, the linear relationship between the concentrations of tryptophan and ethyl butyrate with the corresponding responsiveness demonstrated the capabilities of the sensor. The reported device was successfully applied to distinguish 16 baijiu brands. This simple and rapid method has outstanding potential for the characterization of alcoholic beverages.

Abstract:In this paper, ZnO nanoparticles were prepared by the renovated hybrid induction and laser heating. The sensitivities of gas sensors can be greatly improved by doping MnO2, TiO2 and Co2O3. Five different Chinese liquors, namely, Baiyunbian, Beijing Erguotou, Red Star Erguotou, Zhijiangdaqu and Jianliliangjiu, alcohol and diluted alcohol (forged liquor) were measured. Though the main ingredient is alcohol in liquors, Chinese liquors mainly differ from their flavour types, which rely on their trace components. Flavour type of liquors is a very important factor in Chinese liquor identification. Principal component analysis incorporating with discriminant analysis (PCA-DA), back-propagation artificial neural network (BP-ANN) and learning vector quantization (LVQ) were compared for their classification ability. The accuracy of PCA-DA, BP-ANN and LVQ in terms of predicting tested samples was 76.8, 71.4 and 89.3%, respectively. The LVQ is the most suitable pattern recognition algorithm in present experiment. This work shows the potential application of the gas sensor arrays for monitoring the quality of Chinese liquors.

Abstract:Given the severe problem of Baijiu authenticity, it is essential to discriminate Baijiu from different origins quickly and effectively. As organic acids (OAs) are the most dominant taste-imparting substances in Baijiu, we proposed a simple, fast, and effective OAs-targeted colorimetric sensor array based on the colorimetric reaction of 4-aminophenol (AP)/4-amino-3-chlorophenol (ACP) under oxidation of Cu(NO3)2 for the rapid discrimination of origins of Baijiu with three main aroma types. Hydrogen ions ionized from OAs induced the protonation of the amino group, which blocked the colorimetric reaction, and the different levels of OAs in Baijiu enabled the array to discriminate different origins of Baijiu. The array was implemented to analyze 10 simple OAs and 16 mixed OAs and further for the discrimination of 42 Baijius with an accuracy of 98%. This method provided an efficient research strategy for a basis for rapid quality analysis of Baijiu.

Abstract:In this paper, we report a chemiluminescence (CL) sensor array based on catalytic nanomaterials for the discrimination of ten sweeteners, including five natural sugars and five artificial sweeteners. The CL response patterns ("fingerprints") can be obtained for a given compound on the nanomaterial array and then identified through linear discriminant analysis (LDA). Moreover, each pure sweetener was quantified based on the emission intensities of selected sensor elements. The linear ranges for these sweeteners lie within 0.05-100 mM, but vary with the type of sweetener. The applicability of this array to real-life samples was demonstrated by applying it to various beverages, and the results showed that the sensor array possesses excellent discrimination power and reversibility.

Abstract:Baijiu authenticity has been a frequent problem driven by economic interests in recent years, so it is important to discriminate against baijiu with different origins. Herein, we proposed a simple and efficient esters-targeted colorimetric sensor array mediated by hydroxylamine hydrochloride. Esters undergo a nucleophilic addition reaction with hydroxylamine hydrochloride to form hydroxamic acid, which rapidly forms a purplish red ferric hydroxamate under FeCl 3 ·6H 2 O. Bromophenol blue and rhodamine B enrich the color effects. The array detected 12 esters with a detection limit on the order of 10 −5 of most esters and 16 mixed esters with R 2 > 0.999 and recoveries close to 100%. Otherwise, for discriminating 34 strong-aroma baijius (SABs), the array has an accuracy of 98% according to the origin, and 95% according to the grades, with a response time of 1 min. This study provides a new strategy for authenticity determination and quality control of baijiu.

Abstract:An acid-sensitive carbon dot fluorescence sensing array was investigated for the differentiated recognition of distilled spirits. Due to the electrostatic interactions between CDs and organic acids, organic acids affect the protonation and fluorescence properties of CDs, which in turn modify the CDs triple fluorescence emission. The regular linear variation of the fluorescence sensor was found under acidic conditions (3.0 < pH < 6.2). A comprehensive study of acids with selectivity, different concentrations (0.1 mM, 1 mM, 10 mM, 40 mM), different types (8 species) and mixed acids (formic acid and acetic acid), and good quantification capability for acetic acid (0.01-1 mM). Demonstrating good recognition ability of the sensor array for complex analyte. On this basis, the fluorescence sensor array was applied to the classification and recognition of liquors. LDA has realized the identification of 16 kinds of Baijiu and 21 kinds of distilled liquors with an accuracy of 100%.

Abstract:Molecular recognition of sugars and a practical method to detect and discriminate among a large number of such similar analytes remain substantial scientific challenges. We report here a low-cost, simple colorimetric sensor array capable of identification and quantification of sugars and related compounds. Fifteen different monosaccharides, disaccharides, and artificial sweeteners were differentiated without error in 80 trials. Limits of detection at pH 7.4 for glucose were <1 mM, which is below physiologically important levels.

Abstract:Eighteen commercial beers have been analyzed in both liquid and gas phases using colorimetric sensor arrays made from selected chemically responsive dyes printed on a hydrophobic membrane. Digital imaging of the dye array before and after exposure to the complex analytes in either the liquid phase or the head-gas provides a color change profile as a unique fingerprint for the specific analyte. The digital data libraries generated were analyzed using statistical and chemometric methods, including principal component analysis (PCA) and hierarchical clustering analysis (HCA). In either liquid- or gas-phase experiments, facile identification of specific beers was achieved using comparison of the color change profiles; using HCA statistical analysis the error rate of identification was <3%. Differentiation between even very similar beers proved to be straightforward. In addition, differentiation of pristine beer from the effects of watering or decarbonation proved to be possible. These results suggest that colorimetric sensor arrays may prove to be useful for quality assurance/quality control applications of beers and perhaps other beverages.

Abstract:A three-unit colorimetric sensor array in aim of detecting heavy metal ions has been constructed with two off-the-shelf dyes. Multivariate data analysis is performed using LDA and HCA to recognize colour change patterns based on both absorption spectra and RGB values from image scans. The sensor array is able to differentiate 15 metal ions not only in separate solutions, but also mixtures of 3, 5, and 7 different metal ions and real water samples.

Abstract:The correct classification of strong-flavored crude baijiu affects its quality and overall standard and is crucial for the intelligent development of the baijiu industry. In this work, we developed a novel optical sensing array using lanthanum-doped carbon dots (La-CDs). Using La-CDs with three metal complex dyes-chromium black T, alizarin red, and dimethylphenol orange-we were able to detect organic acids and tannic acid (TA) in crude baijiu in a way that was both colorimetric and fluorescent for the first time. Based on the indicator displacement (IDA) principle, organic acids competitively replace the dyes' binding sites on La3+, causing the dye colors to change to varying degrees. TA quenches the fluorescence of quantum dots through an internal filtering effect. We analyzed the data using pattern recognition algorithms such as HCA, PCA, and LDA, successfully classifying and identifying 16 types of strong-flavored crude baijiu, which included 10 types of carboxylic acids and various grades. In blind tests of 32 crude baijiu samples, the colorimetric method achieved a 94 % accuracy rate, while the fluorescence method achieved 100 %. The sensor demonstrates significant advantages in response speed.

Abstract:Fourteen commercial soft drinks have been analyzed using colorimetric sensor arrays made from a set of 25 chemically responsive dyes printed on a hydrophobic membrane. Digital imaging of the dye array before and after immersion provides a color change profile as a unique fingerprint for each specific analyte. The digital data library generated was analyzed with statistical and chemometric methods, including principal component analysis (PCA) and hierarchical clustering analysis (HCA). Facile identification of all of the soft drinks was readily achieved using comparison of the color change profiles or a PCA score plot. Using a HCA dendrogram, the misclassification rate was <2%, and even very similar sodas were easily differentiated. In addition, the monitoring of soft drinks as they degas or upon dilution also proved to be possible. This work demonstrates the potential of our colorimetric sensor array technology for quality assurance/control applications of sodas and perhaps other beverages as well.

Abstract:Molecular recognition of organic compounds in aqueous solutions is inherently challenging due to the potential interference from the very high concentration of water. Here we present a simple colorimetric sensor array that probes a wide range of chemical properties. By printing hydrophobic dyes on a hydrophobic membrane, sensor arrays are easily prepared that provide substantial chemical selectivity for the identification and quantification of various organics (both single compounds and complex mixtures) dissolved in water. It is possible to differentiate easily even among closely related organic compounds. Upon immersion in aqueous solutions, digital imaging of the dye array before and after exposure to an analyte provide a color change profile that is a fingerprint for the organic components of the solution. Facile identification of a wide variety of aqueous organic solutions is possible over a concentration range of 0.1 M to 1 muM. Complex mixtures present no inherent difficulty; for example, a series of commercial soft drinks were easily distinguished using the colorimetric sensor array approach.
